21 Day Fix Extreme: Week 2 Progress, Planning, and Prep Update

21 Day Fix Extreme

 I completed Week 2 of the 21 Day Fix Extreme this past Sunday and figured I'd give you a little update!  Although I did cheat a tiny bit, for the most part, I have been right on track.  I have to say, I'm feeling great! I absolutely LOVE the workouts and incorporation
 of weights.  I am definitely seeing a difference in my arms and legs especially. So, I figured I'd start with talking about the workouts.  One of the common statements I hear from people when I invite to my health and fitness groups is "I need to go to a gym to get results."  While I am not in any way against going to a gym, that statement simply is not true.  I admit, it is a pretty nice convenience to be able to get in a solid 30 minute workout that will get me sweaty and burning just as many calories. You don't need to work out for 60+ minutes to see results!  AND, you don't have to waste any travel time or worry about business hours.  Your workout is on your own time and on your own terms.

Another awesome perk of doing a home fitness program, such as the 21 Day Fix Extreme is I don't have to worry about child care. That is a big one for me.   When I started working out at home I was a bit hesitant. My daughters were a bit younger and yes, they crawled and jumped around me. Once they saw that this was something that I would be doing every day, they adapted and even started trying to follow along the videos with me!  A very common word in my house is "exercise."  They just love getting my mat, weights, and shoes out.  In fact, on the occasion that I don't feel like working out, my oldest daughter, who is only 5, tells me I have to!!  Being able to have such a positive influence on my daughters is priceless.

Positive Role Model
 So, how exactly is the 21 Day Fix Extreme working out for me?  I can tell that I am getting stronger.  I decided to increase my "heavy" weights for the program and boy did I feel a difference!  Sure, I'm sore. But it's a good sore!  In just one week, I've found that I can do more reps and hold on to my heavier weights for a longer period of time before switching.

 Although I have outlined the workouts a couple of times on my blog, I thought it would be helpful to continue doing so in my posts.

So here is the breakdown of workouts:

Plyo Fix Extreme: Lower body workout that uses jumping and resistance to torch calories and sculpt muscles. This is by far the toughest one for me!
Upper Fix Extreme: No-rest upper body workout will shred your chest, back, shoulders, and arms. H-E-L-L-O muscle definition!
Pilates Fix Extreme: Uses a resistance band for every exercise and places emphasis on the core. DO NOT underestimate the power of a resistance band!!
Lower Fix Extreme: 30 minutes of challenging lower body work that will get your glutes, quads, hamstrings, and calves a GREAT workout!
Cardio Fix Extreme: Weighted cardio moves and traditional metabolic training intervals that will keep your heart soaring!
Dirty 30 Extreme: 7 compound moves focusing on multiple body parts at a time.  You will burn lots of calories while defining your muscles.
Yoga Fix Extreme:  A fast-paced yoga class combining strength, balance, flexibility, and power.
10 Minute Hardcore: An ab-shredding workout that utilizes a single dumbbell to increase intensity, which will carve out lean, ripped abs. DEFINITELY effective!

Ok, now on to nutrition!  Did you know that your nutrition is about 80% of your results?  That's right!  You can work your tail off at the gym or with a home fitness program but if you aren't controlling what's going in your mouth, then you are wasting your time.  You will not see the results that you are hoping for.  Nine times out of ten, if someone comes to me saying they don't understand why they didn't lose weight, it comes down to nutrition.  So, here is the plan that I followed for Week 2 of the 21 Day Fix Extreme.

Shakeology
As usual, I keep it simple.  I don't have time, just like many others, to have something totally different each day for all of my meals.   Plus, it is economically smart to eat some of the same foods throughout the week.  One of the hiccups I had in my plan is the fact that we celebrated my daughter's fifth birthday on Sunday!  Yes, there was cake (cupcakes to be exact) but those weren't really tempting.  What WAS tempting were the pretzels and chips and a couple other sweets that were on the counter!  I did indulge in a small amount of treats and then left it at that.
In addition to the temptations on Sunday, Tuesday was a tough day as well!  Tuesday was my daughter's official birthday so we did her favorites: went to the Children's Museum and to Build a Bear.  That meant that we were out of town for the day.  While many people would use that as an excuse to just pick up some fast food or eat whatever they could find, I did not!  What I DID do was drink my Shakeology in the morning, had a baggie of celery/natural Peanut Butter and carrots in the car, brought an apple, walnuts, and Greek Yogurt for lunch, and had another shake as my afternoon snack!  Overall, I did great and didn't even get off track!  Why?  Because I PLANNED AHEAD.  I can not stress the importance of planning ahead! It will leave you feeling so much better about your choices. And quite frankly, having something like Shakeology is the epitome of convenience!  Seriously, a delicious milkshake tasting shake that provides me with my daily dose of nutrients while giving me energy and curbing my cravings. It really doesn't get any better!

If you notice in my meal plan, I did try something new.  The 21 Day Fix Extreme book had a recipe for Peanut Butter and Strawberry Oatmeal. That combination didn't sound very appealing to me, but I gave it a try anyways.  OMG am I glad I did!!! It was SOOOOO good!  It's not something I would want every day because I like to use my yellow container elsewhere; however, it's definitely something that I plan to have weekly.  You should totally try it!

So, overall I am extremely happy with how the 21 Day Fix Extreme is going for me.  I am about 7 weeks away from a Beachbody trip to Cancun, Mexico so I am trying to stay super focused!  I would LOVE for you to join me in my next Pick Your Fix Accountability Group!  Preseason week begins on Monday, March 9th.  Throughout the first week everyone will set goals, take measurements, learn about Shakeology, and I will then provide the support to guide you through the meal planning process of the 21 Day Fix or 21 Day Fix Extreme.  Then, we begin the program!  My groups run through a closed Facebook group so only the members of the group can see what is being posted. It's a safe place to go for that extra support, accountability, and motivation to keep you on track with your goals.

**Please Note:  These groups are provided free of charge for my customers, Coaches, and their customers.  So, if you are not already actively working with a coach, fill out and submit the form before to reserve your spot!!

Turkey Lettuce Wraps

Yep! I'm bringing you another 21 Day Fix Extreme recipe!  Seriously, every single recipe I have tried in this Eating Plan book has been delicious!  I know I said this with the turkey meatballs, but I was NEVER a fan of ground turkey. I just couldn't acquire a taste to it. I eat so much chicken that I really wanted to get some other meat source (aside from red meat) so I decided that I would try some of these ground turkey recipes and see how it goes. I am certainly not disappointed!  I am finding that I just never had the right mix of seasonings to make it good!  Well, I have found yet another great one to add to my list!  I actually made this on Sunday and stored it in a container for the week.  Each day for lunch I pull it out, scoop out my portion, heat it up, top it on a large piece of Romaine lettuce and I am all set!   I love that I don't have to think about what I am eating each day for lunch and that I really have very minimal prep each day! It's worth the 20 minutes that it took to make on Sunday!

Turkey Lettuce Wrap

 (This make 6 lettuce wraps.)
 Ingredients:
* 1 1/2 lbs. raw lean ground turkey breast (at least 93% lean)
* 1 tsp. garlic powder
* 1 tsp. ground cumin
* 1/2 tsp. sea salt
* 1/2 tsp dried oregano
* 1 tsp. chili powder
* 1 tsp. paprika
* 1/2 medium onion, finely chopped
* 1/2 green bell pepper, finely chopped (I also used 1/2 red bell pepper)
* 3/4 cup water
* 3/4 cup tomato sauce, no sugar added (4oz)
* 1 large lettuce leaf, washed, and dried (per serving)
* 1 medium tomato, chopped
* 1 cup fresh cilantro

Directions:
  1. Heat a large nonstick skillet over medium heat.  Add the turkey and cook, stirring frequently until no longer pink.
  2. Add the garlic powder, cumin, salt, chili powder, paprika, and oregano.  Mix well.
  3. Add the onion and bell pepper.  Cook for about 4 to 5 minutes or until onion is translucent.
  4. Add water and tomato sauce.  Bring to boil. Reduce heat to low.  Cook, covered, for about 10-12 minutes.
  5. Top each lettuce leaf evenly with turkey mixture and top with tomato and cilantro.

Each lettuce leaf would equal a red and green 21 Day Fix / Extreme container.

If you wanted, you could add a yellow container by putting the mixture on a 100% whole wheat tortilla, or, you could keep it on the lettuce leaf and add a yellow container of black beans!

Enjoy!

Peanut Butter and Strawberry Oatmeal

I decided to stray away from my usual veggies and egg whites this morning to give this new 21 Day Fix Extreme oatmeal a try. I'm not a huge fan of oatmeal and to be honest, when I read peanut butter and strawberries together it didn't sound all that appealing to me.  I saw some other people posting about how good it was and decided, why not give it a try?! I am so glad I did because it was absolutely delicious!!!  It is definitely going to be a part of my weekly meal plans!

21 Day Fixers, this is 1 YELLOW, 1 PURPLE and 1 TSP.

PB and Strawberry Oatmeal

Ingredients:
  • 1 cup water
  • pinch of sea salt
  • 1/4 cup steel cut oats (if following the original 21 Day Fix you could use Old Fashioned Oats)
  • 1 tsp all natural peanut butter (no added sugar!)
  • 2 Tbsp unsweetened almond milk (optional - I did not need it)
  • 1 cup sliced fresh strawberries

Directions:
  1. Bring water and salt to a boil in medium saucepan over medium-high heat.  Reduce heat to low.
  2. Add oats and cook, stirring frequently for about 15 or so minutes, or until water is just absorbed.  Remove from heat and let stand for 5 minutes.
  3. Add peanut butter and mix well.  If oatmeal is too thick, you can add the almond milk.
  4. Top with strawberries!
I know many people are in a time crunch in the morning, so, I actually ended up putting my oats and water in a bowl and microwaving it for about 1-2 minutes.  It still tasted great!!

Enjoy!

21 Day Fix Extreme Week 1 Planning and Prep

Happy Sunday!! I don't know where all of you are from, but today is a COLD and windy day!  I woke up and read that is was negative 3 degrees!  YIKES!  I figure it would be a good day to stay in, play with the family, and of course, write a blog post!  I just completed Week 1 of the 21 Day Fix Extreme! I am really loving it so far! I am  HUGE fan of the original 21 Day Fix so I was very happy to hear that Autumn Calabrese decided to come out with a new program that increased in intensity.  It is perfect timing too since we will be headed to Cancun in April! So, how did my Week 1 go? Actually, it went great!  I tried some new recipes, new workouts, and even increased my weights!

Let's talk nutrition first.....

A cool feature of this program is when figuring out which calorie / container range you are in, you have a few choices!  Everyone doesn't use the same exact formula. You actually base it on how active your lifestyle is and even have the option of whether you want to lose weight or maintain weight.  As for myself, I still fall in to the first calorie range which is 1200-1499 calories.  So, my nutritional plan hasn't changed that much.  There are definitely some eliminations in this program, for example, pancakes/waffles, bacon, and all treats just to name a few.  As a results, there is no room for cheat meals!  Ahh!!!  BUT, it's only 21 days!  Below is my meal plan that I followed for the first full week (ending tonight of course).

I have to say, there are some DELICIOUS recipes in the Extreme Eating Plan book! I just couldn't wait to try them so I did make a few last week!

Turkey Meatballs
First, I started with Turkey Meatballs.  Now let me just say that #1, I am not a big fan of meatballs and #2, I am not a big fan of ground turkey.  So, why did I try these?  Well, I am a creature of habit and tend to eat the same things for a few weeks or so before switching it up.  Guess what...it was time to switch things up!  I wanted to expand my horizons and give these a try (plus, the picture in the book looked really good!).  MUCH to my surprise, I really liked them!!  They had the perfect amount of seasoning and the big bonus is you get to eat FIVE of them for 1 red protein container!  A couple of days I stuck with just the meatballs, like my plan says, and some other days I ended up adding an extra green container and cutting them up in a small salad.  Both ways were delicious!

For the past several weeks I've been eating my typical cottage cheese, apples, and cinnamon but again, the picture in the Extreme Eating Plan book grabbed my attention and I had to make this Greek Yogurt Parfait. OMG!!! I was sooo good! It is my new go-to snack with just enough crunch due to the walnut addition.

Last but certainly not least, I gave these Chicken Fajitas a try! I've made a few versions of fajitas, all of which are good, but these are definitely going to be my new go-to dinner.  Who would have thought?!  I was a little nervous about my husband looking down at his plate and seeing fajitas in a piece of lettuce rather than a tortilla.  He did give me that "what is this look" at first, but it turns out he really did like it!  I'm actually making them again this week but using some Flank steak instead of chicken!

 The last thing I wanted to mention was another awesome feature of this program.  You actually have 2 choices when it comes to the nutrition plan.  You can choose to follow the 21 Day Fix Extreme plan, which is what my meal plan is based off of, or, you can do the Countdown to Competition Prep plan.   Autumn has decided to share her plan that she follows "to a T" while prepping for her fitness competitions.  I can't share ALL of her secrets but I will say that you eat more frequently, which means more meals,  and lots of protein and veggies. It isn't a plan that is designed to follow forever though. This plan is perfect for when you are ready to drop those last 5-10 pounds, getting ready for a special event, or even a vacation.   In any case, it's nice to have that option there!

 How about we chat about the workouts!
I have three words....I.AM.SORE!!

WOW did these workouts pick up in intensity!  I just completed Insanity Max 30 and these workouts are right up there with that! All workouts use a set of light and heavy weights and/or a resistance band.  My favorite right now is definitely the Pilates Fix Extreme.  There are some crazy moves with the bands and boy are they effective!!

I don't know about you, but when doing all of these home fitness programs I love having a calendar of workouts to track my progress.  It's a good feeling for me to be able to check off my workouts as I go, so, like with the 21 Day Fix, I created a workout calendar for the 21 Day Fix Extreme as well!  If you are doing this program, feel free to print it off for yourself!

Turkey Meatballs

This recipe came from the 21 Day Fix Extreme Eating plan and let me just tell you, they are sooooo good!!  I've been looking for ways to get my protein in that don't always involve eggs, yogurt, cottage cheese, and chicken.  Well, I've found it!  You can actually eat 5 of these for 1 protein serving, or 1 red container.  They do count as 1/2 of a yellow container as well.  I had them yesterday and today for lunch and they were definitely fulfilling!

Mini Veggie Egg Cups

Today is DAY 1 of the 21 Day Fix Extreme for me!  So, throughout the next few weeks I am going to be sharing my journey as well as some of the recipes from the 21 Day Fix Extreme Eating Plan!  This isn't exactly a new recipe for me.  Egg white muffins are something that I would typically eat every other week or so.  The difference that I did this time around was that I used whole eggs rather than egg whites.  I came across this recipe in the Eating Plan book and decided to make them this week and post about it!  They are super easy to make and I even had a little helper last night while I was prepping for the week!

Mini Veggies Egg Cups, Egg White Muffins, Healthy Breakfast, Clean Eating, 21 Day Fix Extreme Recipes, 21 Day Fix Extreme
Mini Vegetable Egg Cups

Serving: This recipe makes 6 egg cups and you can eat 2 per serving!  So, this is enough for 3 days.

Ingredients:
  •  Nonstick cooking spray
  • 6 large eggs
  • sea salt and ground black pepper  to taste
  • 5 oz Baby Spinach, finely chopped
  • 1/2 medium red bell pepper, finely chopped
  • 1/2 medium green bell pepper, finely chopped
  • 1 green onion, finely sliced
Directions:
1. Preheat oven to 375 degrees F.
2. Lightly coat muffin tin with spray.
3. Place eggs in a large blow, whisk to blend, and season with salt and pepper if desired.
4. Evenly pour egg mixture into muffin cups.
5. Fill green 21 Day Fix container with veggie mixture and separate in to 2 egg cups at a time.  You will fill the container a total of 3 times in order to split among all 6 egg cups.
6. Bake for approx. 15-20 minutes or until toothpick inserted into the center of cups comes out clean.

You can store these in the refrigerator and heat them up in a microwave when you are ready to eat!

Remember, you can eat 2 per serving! Each serving is 1 green and 1 red container!  I served these with a slice of Ezekiel Toast!

Enjoy!!

Insanity Max 30 is COMPLETE!! Check out my review and results!

Insanity Max 30 Results, Insanity Max 30, 21 Day Fix Extreme, Insanity Max 30 Workouts, Shaun T
Insanity Max 30
Good Sunday Morning!! So, today is the big day!  The day that I am ready to share my Insanity Max 30 results, as well as my personal review of the program!  So, overall, I am pretty proud of accomplishing this program from start to finish.  I'm not a huge cardio fan so I was a bit nervous about doing such an intense cardio workout. In fact, while I was excited to hear that Shaun T was coming out with another program, I wasn't sold on actually purchasing it myself.  As the release date came closer, I was starting to get that itch to give it a try.  So, I ordered it!  I ran an exclusive Insanity Max 30 challenge group, which is a group where I provide support, motivation, and accountability throughout the duration of the program.  The only difference is, I didn't just LEAD the group, I acted as a challenger too!  What does that mean?  It means that along with 5 other fabulous ladies who fully committed to the program, I not only provide that motivation and support, but I shared my accountability stats and progress as well.  If I had a bad day, I shared it! If I skipped a workout, I admitted it!  As a group, we all held each other accountable to our goals, and it just plain WORKED!

So, let's talk about what exactly my start to finish looked like.  I was off to a great start when I began Week 1.  The workouts were kicking my BUTT and I was modifying quite a bit. In addition, I felt soooo sore that first week!  Week 2 came along and I couldn't believe it, but I actually noticed an increase in my Max Out time!  That was motivation enough for me to just keep on going.  Then came Week 3....dun dun dun!!!  While I was still seeing an increase in my Max Out times, I ended up skipping a couple of workouts and yes, having a few more treats than intended due to the holidays.  I followed that 80/20 rule the week of Christmas but even at that, I was feeling pretty BLAH! But you know what?  I'M HUMAN! I'm certainly NOT perfect!  So, after redoing Week 4, I was finally in to Month 2 and whew wee!!  The workouts DEFINITELY picked up in intensity, which I didn't even think was possible! There were a lot of push up type moves and even one handed burpees! Yikes!!

Here are my top 3 reasons why I LOVED this program:

1. It contains all 30 minute workouts 5 days per week.  There are no double days unless you add in the 10 minute Ab Attack  workouts every now and then.  Even on Day 60, the workouts are still challenging and leaving me sore!
2. It follows the 21 Day Fix Nutrition Plan!  Say what?!!  That's right, this program has the food lists and serving sizes for each category so for those who do NOT already have the containers, you can still do it too! I have never found such an effective nutritional plan that works for everyone!
3. Motivation!!  I've done other Shaun T workouts and have enjoyed those as well, but nothing like Insanity Max 30.  I found him to be super motivational and I especially loved that his people doing the workouts with him in the videos struggled too!  That's kind of weird huh?  Seriously though, I hate watching workout videos were the people barely even work up a sweat.  With Max 30, everyone is running to the Max Out board writing their Max Out times in, and that INCLUDES Shaun T himself!

In all honesty, I really can't think of anything negative to say about this program! It certainly isn't for someone who is a beginner just starting out on his or her fitness journey. It kept me interested throughout the entire 60 days and I can't even begin to tell you how much stronger I feel!!  A big accomplishment for me was increasing the number of "un modified" push ups I could do.  Pushups just aren't my thing and I swear every time I do about 5 standard push ups, I feel like I am going to collapse!  I started noticing a difference in my arms, obviously, and even my energy!

So, how about that nutrition guide?  As I said above, one of the cool features of this program is that it pretty much follows the 21 Day Fix program.  That was GREAT news to me because I have been basing pretty much all of my meal plans on of the 21 day fix for almost a year now!  It's all totally normal foods that are inexpensive and easy to find. So how did I do with it?  I would say I did good 85% of the time.  I know, it's not 100% but, I am still happy with how far I have come!  Christmas and New Years were thrown in to the mix and while I did not over indulge in sweets each of those days, I DID have a couple too many! What can I say?  I'm human, right?!!!
One consistent thing that I did do daily with the nutrition plan was drink my Shakeology. I just can't get enough of that stuff!!

Ok so let's talk about my Insanity Max 30 Results!! Truth be told, I was hoping to have better results than this, BUT, I know why I didn't.  It's because of my nutrition!  Anyone can work their tail off in the gym or doing a home fitness program; however, if you don't get that nutrition under control you are wasting your time!  While I did have some cheats throughout the 60 days, I am down 6 pounds and 8 inches!  I'll definitely take that! I do not typically share pictures of my results once I complete a program, but I feel such an improvement in my overall strength that I decided to share after all.

So, thinking back, I am SO glad that I decided to give Insanity Max 30 a try!  It's all about stepping out of your comfort zone.  Is that something you do each day? I've come to realize that by stepping out of your comfort zone and giving something a try, you really CAN do it!  Too many people let fear get in the way and that is only pushing those dreams back!  If you are serious about making a change, whether it be physically, mentally, financially, etc. then you have to go for it! Think about how far you would be today if you would have went for something you wanted a year ago! Don't live with regret. Set goals, go for it, and conquer them!

Italian Baked Chicken Breast with Garlic Peppers and Spinach

Good Afternoon!  So I made this dinner a couple of weeks ago and totally forgot to share it!  I am making it again tonight so I figured there would be no better day than today to share it with you! I have made the Garlic Peppers with Spinach a few times as part of my lunch or as a side dish to other dinners.  They are simple to make and are very tasty!
