Strawberry Banana French Toast Casserole

OMG!!!  This was sooooo good!!  I certainly can not take the credit for this!  I found this recipe on The Gracious Pantry and there was nothing that I wanted to change with it!  What I did do; however, was increase some of the amounts of each ingredient (from the original recipe) in order to be enough for my whole family (2 toddlers / 2 adults).  This would definitely make for a GREAT Easter brunch if you are looking for something new this year!

Strawberry Banana French Toast Casserole
Ingredients: (Serves 4-5)
  • 8 slices bread (gluten-free or whole grain), crust trimmed, cut into cubes (Ezekiel bread would be great too!)
  • 1 1/2 bananas, mashed
  • 10 strawberries, diced
  • 3/4 cup almond milk (I used unsweetened)
  • 4 eggs
  • 1/2  teaspoon cinnamon
  • 1½ teaspoon vanilla extract
  • maple syrup for serving
  1. Preheat oven to 375 degrees. Lightly grease a small baking dish with spray oil. Place cubed bread in baking dish. Mix mashed banana, strawberries, milk, eggs, cinnamon and vanilla together in a medium bowl. Pour milk mixture over bread cubes and toss gently until bread is evenly coated.
  2. Bake for 20-25 minutes or until cooked through.
  3. Serve with maple syrup.

21 Day Fix Extreme Meal Plan and Update

Good Afternoon!  It's been a little while since I did a progress update so I figured, why not do one today?! In just over 2 weeks, my husband and I will be taking an all expenses paid trip to the MOon Palace Resort in Cancun, Mexico with several other Beachbody members, including celebrity trainers Shaun T, Tony Horton, and Autumn Calabrese.  It's called the Success Club trip and is earned and based off of your success from the previous calendar year (2014).  Fortunately, I had great success and CAN NOT WAIT to get in to some warm weather!!  I also can't wait to FINALLY meet face to face with some AMAZING friends that I have made throughout the past year or so as a Coach!

So, with a tropical vacation coming up, I am trying really hard to keep my nutrition and workouts in check!  I bought a couple of new bathing suits and they are hanging in my closet as a good incentive to stay on track!  If that isn't something that you've done in the past, I HIGHLY recommend it! I know it sounds crazy, but, one thing that I do with my challengers towards the beginning of a challenge group is have everyone find a picture, piece of clothing, or even a motivational quote that can be hung somewhere in the house to provide incentive and motivation! It really does work! When I find myself wanting to grab some of the girls snacks, or have an extra helping of something, I am always reminded of my goals.  

Let's talk a bit about nutrition....

I am still following the 21 Day Fix Extreme plan (shown below).  It works well for me so why change it?  As you can see in my plan, I am a creature of habit. I like to stick with the same types of foods each week because #1, that's what I like, and #2, it's cheaper!  I find that when I add too much variety I end up throwing food away because it gets bad before I can eat it all.  What I DO like to switch up are my dinners.  That is typically the first place I begin when I sit down to do a meal plan for the week.

Healthiest Meal of the Day!
One thing that is ALWAYS ALWAYS ALWAYS a part of my plan is my Shakeology.  Shakeology is an all-natural shake that contains your daily dose of nutrients.  No, it is NOT protein shake and quite frankly, it really can't be compared to other shakes out there!  There are not additives, it's natural, and if anything, it is more of a nutritional shake than anything else.  Yes, it was clinically proven to help with weight loss but that certainly isn't the only reason you should be drinking it.  I know that it would cost a fortune to get all of the foods you would need in order to truly get your daily dose of nutrients and super foods so, it's much cheaper to get it through a shake! I pay $3.32 per day for a full meal placement that curbs my cravings, provides me with natural energy, keeps me healthy, and more!  There is certainly a convenience issue too.  With a 5 and 3 year old, mornings can be crazy! So, it's much easier to spend about 2 minutes blending up my Shakeology and heading off for preschool drop off.  Shakeology just a birthday too! It's been just over six years since the first release!  Something I often hear is "I don't want to drink a meal." I get it! I thought the same thing! But, guess what?  Aside from drinking my morning Shakeology, I eat FOUR OTHER MEALS throughout the day!  Believe me, I am eating plenty of food!  And come on, you mean you wouldn't be interested in drinking something that tastes like a milkshake each day?! 

Shakeology is going to be my BEST FRIEND next weekend.  Let me tell you, I am a candy lover!!  Between the peanut butter cups and gummy fish, my will power needs to be in tip top shape! You better believe I am going to be taking FULL advantage of my chocolate peanut butter banana shake!

 Since my last update, I have been busy in the kitchen too!  I have actually been on the hunt for some new yummy snacks that I can share with the girls. They LOVE their Goldfish crackers but they eat A LOT of them. So, I tried out 2 new recipes and they were a complete success! 

First up, Frozen Greek Yogurt Bark! One thing that I am happy about is that my girls do really enjoy Yogurt. They eat a yogurt every single day, no questions asked.  I have tried Greek Yogurt with them to add a bit more protein (an area that they do lack a bit in) but it has been a challenge.  So, I tired this Frozen Yogurt Bark with their 2 favorite berries: blueberries and strawberries, and it was a hit! I think having something frozen and giving it a sense of being a dessert helps too!

Next Up: Peanut Butter and Apple Nachos!  I'm sure this is NO surprise, but, when you add a little bit of dark chocolate to something, you better believe kids are going to live it!!  This was a great recipe that my girls have already asked to have again.  I think it would also make for a nice little appetizer to a social gathering as well.

For the most part, I have been sticking with the 21 Day Fix or 21 Day Fix Extreme Workouts.  When you purchase the 21 Day Fix Extreme through a Coach like myself, you get a Coach Exclusive bonus workout called The Fix Challenge. I gave this workout a try the other day and boy was it effective! There really wasn't much jumping with it. It was a full body workout that definitely focused on your upper body, but, my abs were on FIRE the next morning too!  I have also been doing the 2 extra deluxe workouts, ABC Extreme and Power Strength Extreme as well. These workouts have definitely improved my strength and I have noticed a difference in my body as far as toning goes.

BUT,  I have to be honest, I have been cheating a bit on Autumn lately!  While I am LOVING the 21 Day Fix Extreme workouts, I do sometimes like to switch things up.  I get bored doing the same workouts and since I now have access to TONS of workouts, why not keep my body guessing? After Easter Candy Detox!

Can you believe that Easter is only about a week and a half away?!  I swear my days are going faster and faster!  I feel like it was just yesterday that I was walking in to the grocery store being bombarded with Valentines and Valentine candy! Now, Easter Candy is EVERYWHERE!  Seriously, I walked in to Walmart the other day and there was some sort of Easter Candy in every single direction I looked!  My goal this Easter, of course, it to stay on track as best as possible BUT, I know that I will end up indulging in a little candy here and there.  Seriously, I am OBSESSED with gummy candy!  If a bag of Swedish Fish enter my house, you better believe they will be gone before I go to bed!  Sometimes I feel like Easter is tougher than Christmas for me!

Peanut Butter and Apple Nachos

This is a FANTASTIC (and super yummy) kid friendly snack!  There is a little chocolate in there to sweeten things up a bit too!

Peanut Butter and Apple Nachos

  • 2 medium sized apples
  • 2 Tbsp All Natural Peanut Butter
  • 2 tsp honey
  • 1 1/2 Tbsp semi sweet dark chocolate chips

  1. Slice apples and place on a serving dish / plate. 
  2. Combine peanut butter and honey in a small bowl.
  3. Place in microwave for about 10 seconds (enough so that it can drizzle)
  4. Drizzle over apples.
  5. Top with chocolate chips!
**You can use whatever toppings you'd like!  Shredded Coconut would be delicious too!  Just be cautious of the amount of toppings that you use if you want to stick with something that is on the healthy side :)

Frozen Greek Yogurt Bark

I was in need of a yummy new snack that I, and my girls, could enjoy.  I've seen tons of different recipes for Frozen Yogurt Bark so I decided to keep it simple and make my own.  I don't know about you but recipes that only have a few ingredients are pretty appealing to me!  Not to my surprise, my girls loved it! This will be perfect snack for Summer time too!

  • 2 cups plain Greek yogurt
  • 2 Tbsp honey
  • 1 cup chopped strawberries
  • 1 cup blueberries
**You can really use whatever fruit you'd like.  I think I'll try adding some kiwi and raspberry next time.  You could even add pecans to it!

  1. Mix yogurt and honey in a bowl.
  2. Line a small baking sheet with parchment paper.
  3. Spread yogurt mixture over parchment paper.  Use a spatula to evenly distribute.
  4. Top with strawberries and blueberries (or whatever fruit you'd like!).
  5. Cover with Saran wrap and place in the freezer.
  6. Wait about 2 or so hours then pull out and break the bark in to small pieces.
  7. Store in an airtight container in freezer.

Pay it Forward Initiative - 5 Day Sneak Peek in to what a Beachbody Coach does!

It was around this time 2 years ago that I started really considering looking in to what being a "Beachbody Coach" was. Although I had a friend who was super successful in the business, I did my own research. Of course, I found pros and cons. I didn't jump on board right away, in fact, I kind of "sat on the decision" for 3 months before I took the leap of faith. And even at that, I didn't begin actively coaching when I signed up. I started with seeing what these "challenge groups" were all about. It didn't take long for me to fall in love with not only the products, but with the idea of running these online groups from the comfort of home. For those who know me, I was NOT a risk taker. I am not even someone who stepped out of my comfort zone that much in the past. Nope, I never made any sort of goals either. So, I know some people were shocked to see that I decided to move my life in to another direction just like that. But, I had this gut feeling that I could make it work. I'm sure it's no surprise to hear that I have zero regrets with my decision!

Trust me when I say that one of my FIRST objections to signing up as a Coach was the fact that I didn't have any time to spare in my already packed schedule.  I have two toddlers, at the time I was working as a full time elementary teacher, and my time in general was very limited!  But you see, I had misconceptions about what exactly was involved with being a Coach, just like everyone else!  

I had no idea that there were different routes of Coaching that you can take.  I had no idea that I would be working with a TEAM of coaches who are there 24/7 to support, encourage, motivate, and guide you while building your business.  I was clueless to the fact that I would be on the #1 team in the ENTIRE company! I had the misconception that I was going to have to make some sort of monthly quota and deal with keeping a home inventory.

I was shocked that it truly is a no strings attached, cancel when you want, type of thing. I didn't want to hound my friends and family to buy something and had no idea about the theory of 'sharing' vs 'selling.' I didn't realize that I would build strong friendships with people that I never even met face to face (other than video chats!) I was certainly never a risk taker and would never have guessed that I could build a business from home on my own terms, putting as much or as little effort as I want each day. 

So, why am I telling you all of this?  Because NOW, I am paying it forward.  I am looking to mentor 5 new coaches in my April Pay it Forward apprenticeship group.  I want to individually help these 5 people with not only their health/fitness goals, but also their financial goals!  BUT, you may be skeptical too! So, before that group begins, I am running a 5 day sneak peek group in to what Beachbody Coaching is all about! It begins on Monday, March 23rd and COSTS NOTHING!

21 Day Fix Extreme Week 3 - Round 1 DONE!

Better late than never, right?!!  So last Sunday I officially completed Week 3 of the 21 Day Fix Extreme.  Week1 and Week 2 went great and I pulled through with a strong finish on week 3! I truly enjoyed the entire program and am even doing another round with the Countdown to Competition plan (which I will be sharing)!  

Throughout the 3 weeks I really stuck with basic meal plans. EVERY 21 Day Fix Extreme recipe that I tried from the book was FANTASTIC!  I have since incorporated many of the meals/snacks into my weekly plans.

I really can't think of a better meal to begin the day with!  I actually found that since doing the 21 Day Fix Extreme I was a bit hungrier than usual, so, there were nights that I added in an extra green container, or a 1/2 serving of Shakeology!  Shakeology has also been my saving grace on busy mornings.  I don't know about you, but I tend to have NO extra time in the mornings.  In the past I would just pop a big bagel in the toaster, put some butter on it and take it in the car with me.  IF I had the time, I'd sometimes do a big bowl of sugary cereal instead.  I've come a long way since then and my mornings haven't really gotten any less busy!  It seriously takes me 2 minutes or less to make my shake and go! I know you may be thinking, I don't want to spend the money on shakes.  I have to ask though, what do YOU eat for breakfast?  Do you tend to hit up a McDonald's or Dunkin Donuts drive-thru?  Or for lunch do you order out or purchase from a work cafe, etc?  How much are you spending on these meals?  Did you know you can get Shakeology for as little as $3.88 per day?  PLUS, it is a complete meal replacement so there is no other planning needed for that particular meal.  I'd also like to note the fact that you  are getting natural ingredients that provides you with your daily dose of nutrients, combined with over 70 super foods!  It really doesn't get any healthier. 
ANYWAYS....as usual, each month I have a handful of people who are concerned about eating 'boring' meals or even starving themselves while on the 21 Day Fix or 21 Day Fix Extreme.  I think my meal plan is proof enough that that is not the case; however, here are a couple of other examples. I tried out some Turkey Meatloaf while on Week 3 and it was really good!!  I paired it with some veggies and quinoa a viola!

Another great example is a staple in our house.  Flank Steak with 21 Day Fix Southwestern Seasoning, grilled peppers, green beans, and a sweet potato.  Trust me, I'm FAR from starving!

The workouts are going great as well!!  This program has 7 thirty minute workouts (Plyo Fix Extreme, Upper Fix Extreme, Lower Fix Extreme, Pilates Fix Extreme, Cardio Fix Extreme, Dirty 30 Extreme, and of course Yoga Fix Extreme). My favorite is definitely Dirty 30 Extreme!  I increased my weights this time around and definitely noticed a difference. I burned more calories throughout the workouts and the biggest change I have noticed is in my arms.

I'm also a fan of Pilates Fix Extreme, although I do feel like I am twisting like a pretzel with the resistance band!  It's definitely effective! All jokes aside though,  the program is definitely worth it. Yes, it takes hard work to be healthy.  Yes, it's easier to just be overweight, unhealthy, and eat whatever the heck you want; however, that could not only lead to health problems on down the road, but it also doesn't do much for self confidence.  Wouldn't you like to feel good, have energy, minimal sicknesses, and an overall positive healthy life?

Turkey Meatloaf

I have to admit, when I first came across this recipe in the 21 Day Fix Extreme book, I was a bit hesitant.  We aren't huge ground turkey fans, although we have been expanding our taste buds with some different ground turkey seasonings.  I was pleasantly surprised after trying this. It was really good and also made for great leftovers! In fact, I ended up crumbling up the leftovers to use on top of some salads for lunch the rest of the week!  If you are following the 21 Day Fix program, this counts a 1 red, 1/2 purple, and 1/2 yellow per serving (see below for serving size).

Turkey Meatloaf

This recipe makes 8 servings with 1/8 meatloaf each.

* 2 lbs raw 93% lean ground turkey
* 1 cup all-natural mild salsa
* 1 cup COOKED quinoa, cooled
* 2 large eggs, lightly beaten
* 3 cloves garlic, finely chopped (I used minced garlic)
* 1 tsp sea salt
* 1 tsp ground black pepper
* 1 tsp fresh chopped parsley (for garnish)

1. Preheat over to 375 degrees F.
2. Combine turkey, salsa, quinoa, eggs, garlic, salt, and pepper in a large bowl. Mix well by hand or with a rubber spatula.
3. Shape mixture into a shape of a loaf and place in an ungreased 13x9 inch baking pan.
4. Bake for 60-70 minutes or until the center is no longer pink and meat is cooked through.
5. Let stand for about 10 minutes before serving.
6. Serve garnished with parsley.

I used the leftover quinoa and mixed veggies to serve mine with. It was delicious!
