Peanut Butter Cookie Dough Cookies

I have been wanting a little "treat" but don't want the guilt, sugar, fat and calories that come with it; so I searched online and found this GREAT recipe from He and She Eat Clean.  I had all of the ingredients in the kitchen, so I gave it a try this morning and it turns out they are DELICIOUS and hit the spot perfectly! I, as well as my 3 year old, HIGHLY recommend them :) They tasted like a peanut butter no-bake!

Ingredients: (Makes about 12 small cookies)
* 1/2 cup quick cooking oats
* 1/4 c natural peanut butter
* 2 tsp pure vanilla extract
* 2 squares of dark chocolate.  (I bought a a Lindt dark chocolate bar that was 85% cocoa)
* 1 Tbsp honey
* 1/4 c egg whites (make sure you use the 100% egg whites, pasteurized)* 1 Tbsp unsweetened vanilla almond milk (you can add more if needed)



 Directions:

1. Place ALL ingredients in a blender and blend!
2. Line a dish with wax paper and scoop out 12 spoon fulls. 
3. Place them in the freezer for 1 -2 hours.
4.  ENJOY!

So if you follow me on Facebook or Instagram, then you know that I recently returned from an AMAZING vacation courtesy of Beachbody. It was called the Beachbody Success Club trip and was held in Cancun Mexico at the Moon Palace Golf and Spa Resort.  I am still decompressing and thinking about all of the conversations, trainings, and ideas that are swirling in my head! We were provided the luxury accommodations for 5 days and 4 nights, although my husband and I decided to go a day early!  This was actually my FIRST success club trip since I started Coaching in September 2013.  I sometimes have to just sit back and remind myself how lucky I am to have such a life changing turn of events this past year and a half.  I was actually a sixth grade teacher for 7 years as well as an Instructional Literacy Coach for 1 year before taking a one year leave of absence for the 2013-2014 school year.  My husband and I ran in to child care issues and weren't happy with our options, so, fortunately, I was able to take a year off.  Before all of this happened I spent a few months in a Beachbody Challenge Group with MY Coach.  I couldn't believe how effective the group was and how much I loved the lifestyle change that I was creating.  So, I decided to start Coaching!  Let me tell you, there hasn't been one time where I regretted my decision!  In fact, I ended up fully resigning from my teaching position so that I can stay home with my girls as well as work my Coaching job on the side!  It has truly been a blessing!  This all leads to my first Success Club trip!

Let me tell you a little bit about what Success Club means.....

So, as a Coach, we earn something called Success Club points. It is based on how many people we are helping, which for me, is through my online accountability groups.  As a Coach I share how I am living a healthy life, how I have incorporated it into my family, and I invite others along my journey! It really is as simple as that!  It's not about being a salesperson or forcing your friends and family to buy stuff from you.  AND, it's not about YOU having to be in the best shape of your life.  We are all on our own personal journey to reaching our goals!  So, as we earn Success Club points, these annual trips are FREE!  PLUS, if you reach certain benchmarks, you get spending money too!  Seriously, it almost sounds too good to be true!  It feels so good to be working for a company that rewards and acknowledges their employees success.

When I signed up and then earned the trip, I wasn't sure what to expect. I mean, Beachbody is paying, there were roughly 3,000-4,000 Coaches who would be going, PLUS a guest or even entire family. I figured we would be at a moderate resort with O.K. accommodations.  I mean, it's a free vacation so I'd take it, right?!  What I WASN'T expecting was a gorgeous, luxurious resort with flawless transportation to and from the airport, an AMAZING welcome and farewell dinner / party, fabulous restaurants, a Spa, AND access to live celebrity trainer workouts!

It was like Beachbody overtook the resort!  We had our own special check-in and complete area filled with excursion sign ups, Shakeology, snacks, and of course, those AWESOME workouts! Each morning we had the opportunity to do a LIVE workout with Shaun T, Tony Horton, and Autumn Calabrese.  There is nothing like the energy that you feel when doing a live workout with any of these trainers!

 And of course, we can't forget about SHAKEOLOGY!  Each morning there was a huge set up with chocolate, vanilla, and strawberry Shakeology!

 All of the Coaches who were attending the trip also had an opportunity to earn a photo op with the celebrity trainers.  You earned it based on your success from the first 2 weeks of April.  I fortunately hit my goal and earned that photo op! It's so cool to be able to meet the very same people that you watch on TV each day during your workouts! And they are ALL incredibly sweet and genuine.

Throughout the week we also had the opportunity to attend some different trainings.  They included trainings with the trainers, the Elite Top 10 Coaches, as well as business building informational sessions.  It was at our opening meeting that we learned about Shaun T's BRAND NEW workout, called CIZE, that is coming out in July 2015!  It is a dance based workout and looks like A LOT of fun!  In addition, we learned that Beachbody will also be releasing a new line of energy performance drinks to enhance your workouts.  Overall, it was nice to hear the background of each of the trainers and to see how far they have come even though every single one of them were hit with rejection after rejection.

The best part of the trip; however, was the fact that I was able to meet SO MANY Coaches! I mean, we've all met online, but not face to face!  More so, I had the pleasure of meeting one of my personally sponsored Coaches, Signe Williams, too!  She shows up in a lot of pics because we spent a good portion of the trip together!  I swear it felt like we knew each other forever! Heck, we even have the same birthdays! It's so crazy how people come in to your lives.

Party Time!

 There actually, I believe, over 50 Dream Team Coaches that were lucky enough to go on the trip, so, we were able to meet up and get a group pic too!  Teachers, nurses, stay-at-home moms, full time and part time working individuals make up the small portion of the Dream Team Coaches that were able to meet on this trip. This passionate team of coaches (and not just the ones who were there) support, motivate and help each other as fellows Coaches AND friends. We have built a community of trust and friendship and most of us have never even met face to face! Coaching is not all about reinventing the wheel or being a "salesperson." It is about helping, forming and building relationships with others whether it be from a business stand point or from a coaching standpoint. It is amazing to see and hear about how many lives have been positively changed due to this incredible opportunity. It is no secret that my life has been effected as well!

And of course, I can't forget my guest and biggest supporter, my husband! He has done so much for our family so it was nice to be able to take him so he could experience the commitment, dedication, and overall energy that Beachbody portrays. It even got his wheels turning on how the company works and the incredible potential that it has.

I'm sure it is no surprise for you to read about how much I truly LOVE what I am doing.  It doesn't even feel like a job to me!  I have the best of both worlds! I'm home with my girls while helping others not only live a healthy life, but also reach financial goals as Coaches as well!  

On Monday, April 27th, I am kicking off my next 30 Day Smart Start Coach Basics group! I am capping the group at 20 people which leaves room for 3 MORE PEOPLE! Throughout the 30 days you will be learning the basics of starting up your own business with my guidance and support. If you have that "gut" feeling that this may be for you, then I encourage you to just go with it! A week of Planning, Progress, Packing, and a 3 Day Refresh!


Happy Monday!  Whew! It's been quite a while since I've done a little progress update.  A LOT has been happening and unfortunately my blog posts took a back seat for a bit.  ANYWAYS, I am so excited to say that this afternoon my husband and I are heading to our first destination before flying out tomorrow morning to an all expense paid trip to the Moon Palace Golf & Spa Resort in Cancun, Mexico!  It's called the Success Club trip and as a Coach, you can earn based on your success from the previous year.  Words can not explain how excited I am to get in to the warm tropical sun and to finally meet some of my fellow coaches who I have only "met" through social media.

 As part of preparing for a vacation, planning is super important!!!!  Usually when we go away I look up local restaurants and menus so that I can get a good idea on what I will be eating; however, since we are heading to an all inclusive resort, things are a bit different!  We are limited to the restaurants on the resort, we will be out of the country, and we really aren't positive on what our food choices will be.  So, does that mean I am going to throw in the towel and over indulge all week?  Absolutely not! I have been on countless vacations where I have had the "it's vacation" philosophy  when it comes to food and let me tell you, that constant instant gratification just isn't worth it to me.  Yes, I'll have a few drinks and yes, I'll indulge is some things that aren't necessarily on the 21 day fix plan :) BUT, I am also bringing some back up plans!  So, I stocked up on Quest Bars, Shakeology, Almonds, and I also have some peanut butter crackers that I am taking along.  In addition, I portioned out baggies of oatmeal. Weird, I know. BUT, I'm pretty picky when it comes to eating foods out of the country and I want to make sure that I have something that I KNOW I will like!

So, in preparation for this trip, there were a couple of things that I did.  For starters, I tried really hard to stick to my plan on Easter.  I got up, had my shake, and then indulged in some treats here and there.  The day didn't go quite as planned as far as food choices went, but, I had a solid plan for the upcoming week that would take care of the sugar high that I ended up on.

So, I decided to do a 14 day Candy Detox group where everyone in the group committed to completing the 3 Day Refresh as well as daily Shakeology.  The group is still going on and things are going great!  The average weight loss for those who have finished the Refresh has been about 3.5-5.5 pounds!!  I personally did the refresh and lost 4 pounds!  More importantly, I got rid of the candy cravings, sugar high, and extra bloat that I seemed to accumulate over Easter weekend.  While it takes some commitment and dedication, the 3 Day Refresh isn't all that bad! This is actually the 3rd time that I completed it.  I like this detox program because you can eat real food and aren't constantly starving! In all honesty, the only time I felt hungry was later in the evenings while I was working on my computer.  I ended up going to bed early those 3 nights and let me tell you, I had the best sleep EVER!  I actually don't recall having slept so soundly the past two times I completed the Refresh.  

Planning is KEY  when doing the 3 Day Refresh. What I did first was go through the Eating Plan book and choose the foods that I wanted to eat.  Then, I created a meal plan! I have to not, on Friday I planned for a 1/2 apple but forgot to take "strawberries" out of my plan, so, it's a little typo. No, I did not eat both!  Anyways, I also make sure to plan out the rest of the days as well. The last thing you want when you do something like this is overindulge when it's over and gain all of the weight back.

Second, I PREPARED the food! Seriously, I cut up and cooked anything that I possibly could. I took it a step further and made sure everything was on an eye level shelf in the refrigerator.  Past experience has shown me that the more prepared you are, the easier it is to stay on track. So, my meal plan sat on my kitchen counter throughout the week and I STUCK TO IT!

The food that you eat with this program isn't all that bad either! In fact, check out my spinach / mixed greens salad that I had for dinner!  That is actually on a large dinner plate!  I ended up eating that all 3 nights because for me, that is the most fulfilling. There are several options to choose from.

I will admit, that by the final day, I was ready for some chicken!!   Overall, I was happy with my results.  I enjoyed the fiber shake much more than I have in the past and I definitely looked forward to my shakeology each morning! If you are wondering what the purpose is of this program, there are a few reasons why you may want to consider it.  For starters, if you need to drop a few pounds in a quick amount of time, whether it be for a vacation, wedding, upcoming reunion, etc. then this would be a perfect choice. In addition, if you hit a plateau or if you just need to kick some poor eating habits, then this will do the trick!  I do still have some Easter candy sitting on my dining room table and I'll admit, I was sneaking it here and there before I started the refresh and now, it's not evening tempting me anymore! Aside from doing the 3 Day Refresh and following the 21 Day Fix / 21 Day Fix Extreme plan, I was also keeping up with my daily exercise.  I haven't actually been following one program. I've been taking advantage of Beachbody on Demand and trying out some different workouts.  Even though things have been a bit crazy, I MADE SURE that I scheduled in that 30 minutes to myself. Yes, the girls jump around while I exercise and yes, there have been a handful of times where I need to pause in order to help them with something, but, I DO IT and I give 100% effort!!

I know that it's tough to sometimes find the time to work out.  By the time your kids get to bed it's after 9:00pm and you're just too tired to get up early, right?  Guess what? I get it!! We are all busy!  Who has time to add one more thing to their daily to-do list, right?  And I know what it's like to say "I'll do it over the summer when I have more free time" but honestly, does that "free time" ever come? When it comes down to it, you just have to MAKE THE TIME. If that means getting up a little earlier, then do it!  If that means giving up time scrolling through your Facebook news feed, then do it!  If that means recording your favorite TV shows so that you can watch the recording while you are working out or before you go to bed, then do it!  It wasn't until I re-prioritized my day when I discovered that I had a lot of "wasted" activities I was doing.  I threw that oh so popular I don't have time excuse out the door!

Then, when I complete a program, I enter my results and get my FREE t-shirt!

 So, that's about all of the tough love I have for you today :)  I know all of this is easier said than done and if you would have told me a year or so ago that I'd be prioritizing my life so that I can meal plan, exercise, work from home, and be there for my family, I'd think you were crazy! Yes, I've made some sacrifices. I watch VERY LITTLE TV, if any, and I stay up late to get my work done, but, it's ALL worth it! I wouldn't change a thing! And I will be especially grateful this week while I am laying on the Beach in Cancun knowing that my hard work in both my business and in my personal life is being appreciated!

The root of all of the positive, healthy habits that I have formed has been because of one thing. ACCOUNTABILITY GROUPS!  The day I decided to join one with MY Coach was the day everything changed.  I took it seriously and I never looked back.  Next Monday, April 20th, I am hosting a DROP A DRESS SIZE CHALLENGE! The first week is all about planning and prep. Everyone will be setting goals, taking measurements, learning about meal planning, shakeology, and how to incorporate that, along with daily exercise. Then, on April 27th, the 30 day challenge begins!  Everyone who drops one pant size will be entered in to a drawing for a CASH REWARD! The final amount will depend on the number of people in the group.

Drop a Dress Size Challenge


Spring is HERE and warmer weather (at least in Central PA) is on the horizon!  I actually had the windows open yesterday!  Even better, I pulled out my flip flops!  Hallelujah!  I was seriously thinking that Winter would never end!  Anyways, I was out shopping the other day and noticed all of the pretty Spring and (the start of) Summer clothes coming out.  In the past, I always dreaded this time of year because I never knew if my capris, skirts, and shorts would fit me.  Typically, I'd go on some yo-yo unhealthy diet to drop a few pounds but was never really ever satisfied at that.  Another staple at this time of year was to jump in to some sort of workout, which had me determined and motivated for about 2 weeks before I'd end up giving up because I'd lose my motivation and didn't see any results.  On top of that, I'd try really hard to eat "healthy" but when it came down to it, what I was eating really wasn't helping with my results (or lack of)!  Does this sound familiar?  Can you relate to this?  This was my life for SEVERAL years.  Last Spring was actually the FIRST Spring that I didn't have this problem and I can't begin to tell you how nice it was!  I had no clue what I was getting myself in to, but, two years around this time I was looking in to joining a Beachbody challenge group through my friend, and now Coach.  I learned the basics of healthy / clean eating, re-prioritized my day to incorporate 30 minutes of exercise, and most importantly I STUCK WITH IT.  I took advantage of the constant support and accountability that I got through the private group and was finally able to create that permanent healthy lifestyle change for me and my family. 

So, it got me thinking.... I know people love a little challenge and some friendly competition, right?  I always hear about these "biggest loser" competitions at work places and thought I'd try out a little competition of my own!
