Clean Eating Sloppy Joe's

I have to admit, my husband and I had a terrible experience with sloppy joe's YEARS ago and haven't eaten them since!  So, I was a little hesitant on trying them out again, but, I came across this recipe from none other than the Gracious Panty and thought I'd give them another try.  They were EXCELLENT and even got my husband's approval!  



Ingredients: (Make's approximately 8 servings)
Clean Eating Sloppy Joe's, Clean Eating, Sloppy Joe's, Meal Planning, Healthy Dinner Recipes
Clean Eating Sloppy Joe's
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 1/2 pounds of lean ground turkey
  • 1 (15 ounce) can of tomato sauce, no sugar added
  • 1/2 cup clean ketchup. I use an organic brand with 4 grams of sugar per serving
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 medium green bell pepper
  • 1 medium red bell pepper

Directions: 
  1.  Place olive oil in large pan, add the ground turkey and cook over medium heat.
  2. Once the meat is cooked, add everything else!  Stir until well blended and heated through. 
  3. Scoop however much you want onto a 100% whole wheat / clean bun. You could even use a tortilla if you'd like!
  4. Enjoy!

Recipes and Tips to Stay on Track this Memorial Day Weekend

It is Memorial Day weekend and thankfully the sun is shining and the warm weather is coming!  This is the first holiday of the year where those picnic foods make their big appearance.  Hamburgers, hotdogs, potato salad, macaroni salad, dips, desserts, beer, etc.  Ahh!!!  So many choices and let's face it, many of those choices aren't exactly good for your waist line.  It's just about the start of Summer. You don't want to throw all of your hard work out the door over a weekend of bad choices, right?! One of the worst feelings would be waking up Tuesday morning feeling bloated and a couple of pounds heavier.  So, I thought I would recommend a few of my tips to help you stay on track as well as some yummy recipes that you could serve or take to your holiday picnics!  

So, let's get to it!

Get your workout in!  Believe me, I get it!  I know that weekends get busy and after a long hard week you just want to relax.  BUT, it's so important to stick to your schedule!  Why?  For a couple of reasons! First, it's important to get your daily exercise in! Second, once you start skipping workouts, your chances of getting and staying off track increase.  It's tough to get yourself back on track after a
weekend of "whatevers."  I personally use home fitness programs because they are quick and effective.  I don't have to worry about child care and I can do it from the comfort of my home.....whenever I want!

Drink your water!  I know the alcohol may be flowing this weekend.  So, before every alcoholic drink you have, drink a glass of water!  Aside from keeping you hydrated, drinking water helps control your calories, energize your muscles, helps your kidneys, and keeps your skin looking good, just to name a few....   How much should you be drinking?  Easy!  You should be drinking half of your body weight in ounces! 

3. Drink your Shakeology!  I can not say enough about how Shakeology has helped me these past {almost} 2 years!  It gives me natural energy, curbs my cravings, prevents me from skipping meals, and most importantly, provides me with my daily dose of dense nutrients that I otherwise would not be getting.  Coming in an approx $3.32 per day with my discount, it's so much healthier (and even cheaper!) than hitting up a drive through, going to Panera, or even buying something at the grocery store that would contain the same type of nutrients.

4. Don't skip meals!  A theory that I had in the past was if I didn't eat much in the morning (or evening), then I could indulge all afternoon at our holiday picnics.  Sound familiar?  In doing that, I ended up starving by the end of the night not only because I didn't have a balance of meals throughout the day, but my indulgences weren't exactly fulfilling. So, I recommend that you follow that 80/20 rule.  80% of your day you want to stick with healthy balanced meals.  Eat about every 3 hours! Then, 20% of your day can be used on the those indulgences that you would like to have.  Choose wisely!  If you are eating something that isn't exactly healthy, watch your portion size, plan it out, and don't feel guilty about it! 

5. Bring a healthy side dish / appetizer to your party, or, if you are hosting plan/serve some healthy choices!   I know that not everyone is "health conscious."  There are many people that don't really care how healthy or unhealthy something is and there are some who use a holiday to indulge in anything and everything.  So, if you are hosting a party it's OK to have a couple of things there that you wouldn't necessarily eat.   You can't change people if they aren't willing to change!

Spinach Dip
Total Time: 10 min.
Yield: 8 servings, ¼ cup each

Spinach Dip

Ingredients:
*10 oz. fresh baby spinach (about 6 cups), steamed until wilted
*1½ cups nonfat plain Greek yogurt, drained
*3 cloves garlic, finely chopped
*¼ cup finely chopped green onions
*1 Tbsp. fresh lemon juice
*Sea salt and ground black pepper (to taste; optional)

Preparation:
1. Place spinach in colander; drain of all excess water.
2. Finely chop spinach; place in a medium bowl.
3. Add yogurt, garlic, green onions, and lemon juice; mix well.
4. Season with salt and pepper if desired.
5. Refrigerate until ready to serve.




Sweet Potato Skins with Chicken and Spinach
Total Time: 20 min.

Sweet Potato Skins with Chicken and Spinach
Yield: 4 servings

Ingredients:
*4 baked medium sweet potatoes, cut in half
*1 tsp. olive oil
*½ tsp. sea salt (or Himalayan salt)
*4 oz shredded cooked chicken breast, boneless, skinless
*1 tsp. all-natural taco seasoning, no salt added
*1 cup steamed spinach
*8 Tbsp. low-fat plain Greek yogurt
*¼ cup chopped fresh cilantro


Preparation:
1. Heat oven to 400° F.
2. Scoop flesh out of the sweet potatoes and reserve for another use.
3. Place skins on a baking sheet. Brush with oil and sprinkle with salt. Bake for 10 minutes, or until crisp.
4. While skins are baking, combine chicken and taco seasoning in a s mall bowl; mix well. Set aside.
5. Top each sweet potato half evenly with spinach, chicken mixture, yogurt, and cilantro.



Bean Salsa

Ingredients:
*1 Red Onion finely diced
*1 can of Black Beans drained and rinsed
*1 can of Kidney beans drained and rinsed
*1 Avocado sliced into chunks
*1 tomato diced
*1 Tbsp. apple cider vinegar
*2 Tbsp salsa
*1 1/2 cups of frozen corn thawed and drained
*3 Tbsp. Plain Greek Yogurt
*Olive Oil


Directions:
1. Mix all liquid ingredients together.
2. Add in all other ingredients and stir.

  • 1 tablespoon olive oil
  • 1-1/2 pounds lean ground turkey meat

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 medium green bell pepper
  • 1 medium red bell pepper
Directions:
  1. Put your olive oil in a large pan, add the turkey meat and cook over medium heat.
  2. Once the meat is cooked, add everything else. Stir until well blended and heated through.
  3. Scoop however much you want onto a whole wheat hamburger bun.

Make 8 Cups

Strawberry Lemonade
Ingredients:
* 5 cups water
* 1 pound strawberries cleaned and stems removed
* 3/4 cup honey
* 1 cup lemon juice
* Juice of 2 limes

Directions

  1. Warm 2 1/2 cups of water in a pot with the honey until well combined.
  2. In a large pitcher, combine the remainder of the water, the honey water, lemon juice and lime juice.
  3. Put your strawberries in a blender and blend until very smooth.
  4. Put the strawberries through a fine meshed sieve. You’ll have to stir and press with a spatula to get it through the sieve completely.
  5. Stir strawberry juice into the pitcher and stir well.
  6. Chill and serve.

Nacho Soup

I tried out this new recipe from a fellow Coach the other night and it came out GREAT! It made enough for leftovers, which is a bonus in this house!  In addition, it's a crock pot recipe!  Give it a try and let me know what you think!

Ingredients:
* 1 lb boneless, skinless chicken breast

Nacho Soup
* 6 mini sweet peppers, cut or diced into small   pieces
* 1 medium onion
* 1 can organic black beans
* 1 can low sodium corn
* 1 large can of organic diced tomatoes
* 4 cups of vegetable broth (I use organic)
* 1 1/2 tsp cumin
* 1 tsp chilli powder
* pepper
* light shredded cheese



Directions:

1. Cook the chicken on high for 4 hours in the slow cooker with some broth (I just added broth enough to cover the chicken) and 1/2 an onion. 
2. Once cooked, cut the chicken in to small pieces, or you can shred it.
3. Add the rest of the onion, sweet peppers, black beans, corn, vegetable broth, diced tomatoes, cumin, pepper and chilli powder. Cook on high for about 1 hour. 
4. Sprinkle some cheese, top with some left over sweet peppers, and enjoy!

**You can also serve with a side of yellow or black corn tortilla chips!

30 Day Summer Slim Down Challenge

Holy Moly!  We are in the final half of May already!!  This weekend kicks off the first of the Summer time picnics, Memorial Day! On top of that, vacation planning may be in full swing and for all you teachers out there, Summer break is coming up REALLY soon!!!!  I don't know about you, but Summer time brings about new daily schedules. My girls won't be going to preschool, no more dance, soccer will be ending for a couple of months, and relaxing Summer days are right around the corner!  With the lax in schedules, eating habits change too.  Between Summer picnics, days off, and vacations, it's so easy to throw those healthy habits OUT THE DOOR!  You know what I mean, right?  I remember every year when I was on vacation my philosophy was, "it's OK, I'm on vacation!"  If not that, then on Memorial Day, 4th of July, and then again on Labor Day, I'd stuff myself all day on picnic food. 

ANYWAYS, why not start Summer feeling GREAT?!  Why not form those healthy new habits, learn some new recipes, and incorporate healthy eating within your family?  Don't resort to the hamburgers and hot dogs all Summer!  Let's bring that confidence back and get healthy!

So, let me explain a little bit about how my group is going to run...

The week of May 25th we are going to spend some time with planning and prep.  Everyone in the group will be setting their goals, taking measurements / before pics (don't worry, you won't be publicly posting those!), and then we will dive in to the meal planning.  I will provide meal planning guidance, templates, tips, and I will also share my personal weekly meal plans!  I always encourage everyone in the group to  post their meal plans so that I can be sure everyone is on track, and to also share ideas!  That's one reason why I LOVE these groups!  Yes, I host the actual group; however, I am not the only one sharing ideas!  I've gained A LOT of new recipes and ideas from my challengers! 

After the planning week, we will all kick off Day 1 of the 30 days!  Throughout the 30 days I will provide daily posts in the form of motivation, support, tips, etc.  At some point through the day / evening, everyone in the group also checks in. This is the accountability piece!  We have a daily rating on how everyone did with food choices, workout, water, and of course, Shakeology.  At the end of the 30 days you will have the option to continue on in my monthly groups, or give it a go on your own!  

What are the REQUIREMENTS?

A FREE Opportunity for YOU!

 
 
Happy Thursday!  I have been meaning to do a blog post all week about my new sneak peek group, but, "life" has gotten a bit crazy with some sick little girls at my house!  It is times like these that I am so grateful to have taken the risk of being able to build a business from the comfort of my own home, so that I could have a flexible schedule and the ability to stay home with my girls.  It was so nice not to have to worry about taking a vacation day or "reporting" to a boss this week.  My work schedule worked around my family. It wasn't he other way around!  

When I started Coaching I really had NO idea what in the world I was doing.  I didn't have social media experience and I definitely didn't have any type of experience in network marketing.  In fact, I only had a Facebook account for 1 year at that point and I'm pretty sure the most I posted was 2 or 3 pics of my daughters!  I also had less than 200 Facebook friends. Instagram?  NO CLUE Pinterest?  NEVER USED.  Selfies? NEVER IN A MILLION YEARS. A Blog?  REALLY?!  All I knew was that I REALLY enjoyed the online challenge group that I was in, I loved Shakeology, TurboFire, and learning about what it means to truly eat healthy.  After experiencing that, I had that "gut" feeling that I could make this Coaching thing work.  I think back to my life almost exactly two years ago.  I wanted to lose a little weight and tone up before Summer so I did what a lot of people do. I dusted off some old DVD's, stocked up on low-fat, low calorie, low-sugar foods and gave it a go!  Well, that didn't turn out too well!  I felt and looked NO different so I naturally gave up.  At that same time, I was also overwhelmed with my job.  I was a teacher and while my heart belongs to teaching, I was getting frustrated with the amount of "family time" that I was using to get school work done.  So, after talking with my friend, and now Coach, I decided that I would give this all a go.  I honestly just jumped in with 2 feet and never looked back! I didn't have these Sneak Peek opportunities.

As someone who was a home fitness failure, I knew that sticking to a workout schedule would be difficult, let alone helping others do the same. I look at myself now and am proud of how far I have come.  Coaching isn't just about helping others reach their goals, it's also about reaching YOUR goals. You certainly don't have to be at your goal to be a Coach!  I am always learning and growing!  I use my online accountability groups for just as much motivation as my challengers use them for!  It's crazy to think that for almost TWO years, I have consistently been successful at doing MULTIPLE home fitness programs, getting results, and even having those habits rub off on my hubby!  Yes, he thought I was crazy at first but that didn't stop me!




I am now to the point where I have fully resigned from my teaching position and wear two hats at home.  Beachbody Coach and of course, Mommy!  Throughout the past year and a half I have been able to be right there for my girls as well as build a business from my home.  I get to choose when I work and how much effort I want to put in.  I am actually building my business from a corner desk in my girls playroom! Oh, and on nice days, I enjoy making my office on my back porch :)  Reading the joy that challengers in my groups write about makes this job totally worth it!  Hearing that their old pair of pants now fit them, that they are feeling fantastic, and that their habits are now rubbing off on their family is so rewarding!  No, I certainly can't take all of the credit. They are the ones doing all of the hard work. BUT, the support system that we have going on in the groups is so encouraging and motivating!!

No, Beachbody Coaching doesn't have to be a full time job.  The great thing is, it can be WHATEVER YOU WANT IT TO BE! A New Month with New Beginnings

Happy Friday!!  I thought it would be a good time for a little progress update!  Since coming home from my vacation last month, I've stuck with the 21 Day Fix Extreme program.  I really enjoy the Deluxe workouts (ABC Extreme / Power Strength) as well as the bonus workout that comes with the program (the Fix Challenge), so I've incorporated those in there as well.  I have to admit, my nutrition has been OK, but not great.  With our family vacation coming up next month, I need to tighten my nutrition back up and maybe even throw in another 3 Day Refresh!  So, my plan moving forward is to continue with the 21 Day Fix / Extreme nutrition plan and I would also like to incorporate a couple different workout programs.  I want to continue with the Extreme workouts, but would also like to add in some PiYO!  I have several challengers in my groups doing PiYO and it made me miss it!  I completed PiYo last summer and it was a nice break from the traditional cadio type workouts. I was really impressed that I could get a good workout (and a good sweat!) in without having to jump around! 

So, my meal plan that I have been following this past week is shown below.  Like I mentioned above, I am sticking with the 21 Day Fix Extreme plan; however, I do allow myself a little cheat each week.

I have tried a couple of new recipes these past two weeks as well! 

First up, Peanut Butter Cookie Dough Cookies!  OMG you HAVE to try these!  I was in the mood for a sweat treat and these hit the spot!  They tasted like a peanut butter no-bake cookie and we all loved them!

The other night I also tried a new dinner recipe, Pomegranate Chicken.  The best part? It was a crock pot recipe! I made enough for leftovers and was able to make a delicious salad for lunch the following day!  Although it wasn't a part of my plan, it was still 21 Day Fix approved :)

Healthiest Meal of the Day!
As usual, a constant consistent part of my day is Shakeology.  I begin EVERY SINGLE MORNING with it and occasionally like to enjoy it two times within a day! I typically stick with my usual chocolate banana recipe and it never gets old!  I especially love it during this time of year because it's a nice cool treat, without the guilt of course!  I love the natural energy it provides me as well as the fact that it curbs my cravings, which is perfect since it's "ice cream season!"



 




As I mentioned above, I am planning on incorporating PiYO with my 21 Day Fix Extreme workouts.  It will be a nice balance of workouts and I am excited to create a schedule this weekend!  It's been quite a week for me.  Life just got crazy between an out of town husband and sick kid BUT, I did make sure to get my workout in.  Some of them may have been much later than I wanted and others were in between my daughters naps, but, I did it!  I treat my workouts as a priority and non-negotiable part of my day.

Slow Cooker Pomegranate Chicken



I don't know about you, but I LOVE crock pot recipes!  Here is a great chicken recipe that I came across from skinnyms.com. My family really liked it and I was able to use the leftovers to make a delicious salad for lunch the following day! You could also use the leftovers in a 100% whole wheat tortilla.  Give it a try and let me know what you think!

Pomegranate Chicken
Ingredients:
* 1-1.5 lbs chicken breasts
* 1/2 tsp black pepper
* Sea Salt, to taste
* 1 tsp coriander
* 1 tsp chili powder
* 1/4 tsp cayenne pepper
* 2 tsp dried oregano
* 2 Tbsp extra virgin olive oil
* 1 Tbsp Dijon Mustard
* 2 Tbsp honey
* 2 Garlic cloves, minced
* 1 cup pomegranate juice (NO SUGAR ADDED)
* 1 Tbsp white balsamic vinegar
Directions: 
1. In a medium sized mixing bowl, combine the pepper, sea salt, coriander, chili powder, cayenne pepper, and oregano.
2. Add the olive oil and whisk. Coat chicken breasts with the herb and oil mixture before placing them in slow-cooker.
3. In a medium mixing bowl, whisk together Dijon mustard, honey, minced garlic, pomegranate juice, and white balsamic vinegar.  Pour over the chicken.
4. Cook on low for approximately 5-6 hours.  After the chicken is done, remove from slow cooker, place on serving platter, and drizzle with excess liquid.

**I served this with a side of brown rice and some steamed broccoli.

Who is joining me to FIX up for Summer?!

Can you believe it is MAY already?! After a DREADFULLY long Winter and up and down temps through early Spring, it seems that some warmer weather is FINALLY here!!  We spent our first weekend pretty much all outside getting porch furniture cleaned / set up, building campfires, and of course, running around with the girls.  Hopefully wherever you are reading this from, you experienced some nice weather as well!  These warmer temps have cause me to pull out my summer shorts too! Yay!!  BUT, not everyone gets excited for that.  I certainly didn't in the past.  In fact, I had a VERY limited supply of shorts in the past.  I typically stuck with capris and crop pants.  Since I started taking better care of myself, things have drastically changed. This before and after picture is almost exactly 4 years apart.  In between those 4 years I even had another baby!  Not to my surprise, looking back, I couldn't find too many pictures of myself after that happened.  After realizing that I needed to make change and that I need to get past my excuses, I decided that it was time.  Clean Eating, daily exercising, Shakeology, and joining an accountability group were the changes that I made. I've never looked back since!  I feel good in my skin and more importantly, I am HEALTHY.  Yes, it takes some hard work to get there, but once you feel the benefits, I guarantee you won't go back.

One program in particular really changed my eating habits and made me much more aware of what, 21 Day Fix. While I started my journey months prior to the 21 Day fix coming out and did have great success, it really wasn't until I got this program that things started to change.  I realized I was over eating on HEALTHY food and my knowledge on nutritional dense food increased.  On top of that, the workouts are amazing! As a work from home mom of two toddlers, my time is definitely limited. So, having 30 minute workout PLUS, incorporating weights within the workouts, really changed my body.  For me, it's not necessarily about seeing the number on the scale go down. Yes, that's great when that happens, but, I focus on how I feel and how my clothes are fitting.  When the 21 Day Fix Extreme came out, I was so excited to give it a try. except that there were some eliminations, but the workouts got even better!  The intensity increased just enough to make a difference.  You see, these programs come with these awesome little portion control containers so that you know exactly how much you should be eating. As you can see from either picture, while the containers may look small, the actual portion sizes don't!  It's amazing!

 
While I started drinking Shakeology prior to the 21 Day Fix, it is also incorporated into the program.  Shakeology has really been a game changer for me.  I often hear people say "I can't drink a meal" "I don't want to drink shakes all day" "I'm not a shake person" or "It's too expensive."  The thing is, Shakeology isn't just a shake that can help you lose weight. It's a natural shake that contains your daily dose of nutrients. It's a shake that you can enjoy guilt-free instead of the sweets or junk that you may be eating. It's a shake that provides you with energy, curbs your cravings, improves your digestion, and could potentially help get you off some of your medication!  I've had clients that have been able to reduce and/or eliminate both blood pressure and cholesterol meds after consistent use of Shakeology, healthy eating, and exercising.

On top of that, Shakeology costs a customer approximately $4.40 per day.  As a preferred member or Coach, you can get it for $3.32 per day!  Now, let's think about this.  If you pack your lunch or if you eat out, are you really spending less  than that AND getting the same nutritional benefits?  Or better yet, are your mornings crazy like mine?  Do you tend to resort to a bagel, a bowl of cereal, a breakfast sandwich or even worse, skip breakfast all together? I personally like to begin my day with Shakeology.  It starts me out on a healthy note, it's quick, easy, convenient, and keeps me full for about 2 1/2 hours until I eat my oatmeal or eggs.  So, I am not "drinking shakes all day" and I am eating plenty of actual food!I actually eat 4 other meals each day!

My excitement and passion towards this program continues.  About every four weeks I run an online accountability group to help my customers successfully get through either the 21 Day Fix or 21 Day Fix Extreme along with Shakeology.  

The changes that I have made are what I help with and incorporate in my online accountability groups.  I provide my tips, meal plans, consistent group and 1:1 support.  In addition, I provide daily motivation and accountability in helping each and every person reach his or her goals.  We take it one step at a time, one meal at a time, and one workout at a time.  I LOVE the groups because we are all working towards the same main goal of getting healthy.  It's also nice to interact and make new friends!!

So, I am inviting you on this wonderful health and fitness journey!  Beginning on Monday, May 11th, I am hosting a FIX UP FOR SUMMER accountability group!  We will begin with a planning and prep week which includes taking measurements, setting goals, learning about meal planning, and getting physically and mentally prepared for the start of the program.  Then, we will kick off Day 1 of the 21 days the following Monday!  You will create positive, healthy habits that will take you through Summer feeling confident in YOUR skin!
