Planning for a Healthy Summer Vacation!

 The big question is....is it possible to stay healthy on vacation AND still have fun?!  Let me first ask, what route do you take when going on vacation? Do you throw in the towel and indulge in lots of things you wouldn't normally do otherwise? Do you find that balance between staying healthy and eating some treats? Or, do you stay strict with your diet? I'm in the middle! I pack my healthy snacks, hit up a farmers market on the way for some fresh fruit, and head to the grocery store once we are there for some veggies and other "fridge stuff." BUT, I do allow myself to indulge in some treats throughout. I watch my portions and only let it happen a few times. I ALWAYS ALWAYS ALWAYS have my Shakeology for breakfast and bring extra as a back up for when everyone else in indulging. To me, it's about having a plan. I don't know about you but I don't like coming home from vacation feeling bloated and 5 pounds heavier!

So, since I am leaving this afternoon for my family summer vacation,  I thought I'd take some time to share what I am personally doing to prepare.  And before you read this, yes, this does take some planning time!  My opinion....if you don't have a plan, you are setting yourself up for failure!

Our family vacation spot is Rehoboth Beach, Delaware.  We just LOVE it there! I actually grew up going there as a kid, so needless to say, I am VERY familiar with the food options!  There are so many good restaurants that it's hard to narrow it down to 7!  Yes, my family does go out to dinner each night. Come on, it's vacation!  I don't want to cook!  My husband and I definitely have some staple restaurants that we like to go to and then we always leave room for a couple of new places.  I like to look up the menu while I am home because let's face it, healthy or not, when you go out with a 3 and 5 year old, it's tough to have the time to really focus on the menu! So of course, I do a quick meal plan! Now, I do want to note that this is a TENTATIVE plan. I am not a stickler on making sure we eat at the exact places each night!  BUT, we have narrowed it down to where we'd LIKE to eat, and then I went a step further and figured out what I would be ordering. 

Honestly, this plan really didn't take me long at all.  The main reason is because I am already familiar with most of the restaurants AND, I'm used to planning out my meals, so why not do it for vacation too!  If you are going to a destination where you are NOT familiar with the local restaurants, then I suggest doing your research ahead of time so you have a good idea on the types of restaurants/foods you will be dealing with.  If you wait, no problem, do your research in the hotel room or condo.  Most places have some menus that you can browse!

Healthy Planning for a Vacation
 I plan to keep my week pretty basic but I do fully intend to follow the 21 Day Fix plan.  I don't want to have to spend a lot on groceries, or have to waste a lot of food, so I've got a pretty repetitive routine going. I of course plan to begin my day, as usual, with my Shakeology!  I'm not sure there is a more convenient time to have Shakeology than on vacation!  It's quick, easy, super healthy, gives me energy, and will be secret in saying no to those boardwalk temptations! I even take my little mini blender with me!  I do have a few days that I plan to have a second shake. I do not recommend doing this too often, but, vacation is a bit of an exception. I know that I will be eating some foods that I don't eat on a normal basis so I like adding in that extra shake to help with any evening cravings/temptations. 

Some other snacks I am bringing along are Quest bars (no theses are not 21 Day Fix approved; BUT, they aren't all that bad for you!), some almond butter for my celery, almonds and walnuts for my yogurt lunch, and of course, my shaker bottle so that I can be sure I am getting enough water throughout the day. Aside from packing some essentials, I have a grocery list ready to go for when we get there.  It includes unsweetened almond milk, fruits, veggies, egg whites, Greek yogurt, and a few other things for the girls and my husband. 

If you like to switch things up throughout the week, or if you don't see something you'd like, there are several other options you could choose from:
* Oatmeal with some berries
* Peanut Butter Banana Roll Up
* Veggies and Hummus
* Cottage Cheese and fruit
* Apple / Almonds
* Low Fat String Cheese
and the list goes on..... If you click on the Clean Eating Recipes tab, I've got a big list of snack ideas!

Overall, I am set and ready to go! I know that when our vacation is over, I am not going to be feeling overly stuffed and I certainly won't be coming home with any added on weight!  Will I still have fun? ABSOLUTELY! I don't need junk and greasy food to have fun! I know how it makes me feel and it's just not something I want to go through!  NO THANK YOU!

So, if you are heading out this summer for a vacation or weekend getaway, I encourage you to HAVE A PLAN!  If something doesn't work out quite the way you expected, then at least you know you have a back up.  If you choose to indulge in some cheats, then plan it out and do it without guilt! 

I am leaving you with 5 tips that will hopefully help you on your next vacation!

1. Always begin your day with a healthy breakfast!  If that is Shakeology, GREAT! If it isn't, then opt for something like eggs and veggies or oatmeal and berries. 

2. Get your daily exercise in! You should shoot for 30 minutes a day. I am LOVING the fact that I have Beachbody on Demand, because I don't have to worry about bringing along my DVD's.  Regardless, whatever you do, just get that daily workout in! 

3. Stay Hydrated!  You want to aim to drink half of your body weight in ounces. If you are heading to a warmer climate, then you should drink even more! 

4. Eat when you are hungry, not with your eye! This is a BIG one!  I can't tell you how many times I pass those boardwalk fries and want to get some, even though I'm not hungry!  Know the difference between being hungry and your willpower caving.

5. ENJOY yourself! Don't stress about all of the food and junk. If you take some time prior to your trip, map out some sort of plan, and pack some healthy snacks, then you are good to go!

30 Day FIT for SUMMER Challenge!

School is out and Summer is HERE!  (Well, not officially, but almost!) I am super excited for Summer because I have a few travel plans, the first being our family vacation to the beach at the end of this week!  My girls are at the perfect ages, 3 and 5, and I actually think we may be able to go out to eat at some restaurants this year!   In the past, when it came time for vacation, I kinda threw in the towel in terms of making healthy choices.  After all, it's vacation, right?!  Constant eating out, boardwalk French fries, ice cream, candy, snacks galore!  You name it, I probably used to eat it on vacation!  I have to say, that is certainly not the case any more. For the past few years I have been much more conscious about what I am eating and when.  Yes, I still indulge in some treats here and there and yes, we do traditionally go out (or order out) for dinner each night; however, I certainly don't throw healthy eating out the door! In fact, just as I do when I am home, I plan out my meals for vacation too!  My family likes to vacation at the same beach every year so we are well aware of the different restaurants we like to go to. Some people may think I'm crazy but I have to say, it's nice coming home from vacation feeling good and not even a pound heavier! 

Summer can be TOUGH! Everyone seems to think that Christmas time is the hardest part of the year but if you think about it, from May-August we are faced with multiple picnic holidays, summer barbeques, vacations, weekend get-aways, and more!  I know when it's really warm out people tend to skip meals or just grab quick snacks while at the pool or on-the-go with kids activities.

So, this Summer, (actually, NEXT WEEK!) I am hosting a 30 day Fit for Summer accountability group!

  • Also, the group will run through a closed Facebook group so only the members of the group can see what is being posted.  That way you don't have to worry about your business be spread all over Facebook :)

Kid Friendly Frozen Berry Pops


My girls were in need of a good, new, healthy snack and while we were watching Sofia the First the other day (on Disney Jr.), a really cute segment came on called That's Fresh.  Both girls were HOOKED on the little video that was on showing how to make these and they were begging me to make them ASAP.  So, here we are!  This is a GREAT way to get the kids involved in the kitchen. It's a simple recipe that they can most definitely help with!  The girls LOVED them!

I didn't make a large batch because I wanted to be sure that the girls like them first.  The recipe below made 4 berry pops.

Ingredients:
  • 1 1/2 cups Greek Yogurt - I did use vanilla but Plain would be healthier
  • 4 Long Carrot Sticks
  • 8 medium sized fresh strawberries - diced (you could use raspberries, blueberries, or even some kiwi)
  • 1 1/2 tsp Agave Nectar or Honey

Directions:
1. Mix yogurt, strawberries, and Agave Nectar (or Honey) in a bowl.
2. Spoon out mixture into 4 Dixie cups.
3. Place a carrot stick in the center of each cup.
4. Place in the freezer for at least 2 hours.
5. When ready to eat, pop each Berry Pop out of the cup, using the carrot stick as the handle!

Good Morning and Happy Friday! Can you believe we are already a week in to June?!!  The local schools around my area are done and Summer vacation has begun!  If I'm being honest, this past month has been sketchy for me.  Between the normal craziness, some birthday parties / picnics, dance recitals, the temptations have been EVERYWHERE!  Yes I have indulged in a few things here and there and yes, maybe some "not so healthy" things, but, I am right back on track!

So, how about a meal plan? Something that I do every weekend is sit down and create a plan for the week. While I do that, I make my grocery list and head to the grocery store! Yes, it does take a little time to do, but, the week goes smoothly and I don't have to think "what should I make for dinner?" each night.  Plus, I'm not digging through the pantry and fridge wondering what to eat for lunch and snacks.  Below is the plan that I have been following this past week. I have to say, my girls are pretty excited to make their own Mini Pita Pizza's tonight!

 It's been a few weeks since I've posted a progress update and I've add some new recipes to my list!

First up, I made a really good slow cooker Pomegranate Chicken last month.  I originally served it with with some veggies and brown rice but I also made some extra to use in a chicken salad the following day! It was delicious!

Always have a plan!
Whew!!  That's a lot of recipes! I hope you find one that you like! I'm sure it's no surprise to hear that nutrition is 80% of your success when it comes to being healthy and losing weight.  My tip is to ALWAYS HAVE A PLAN!  Whether you are home, at work, or traveling for the day, having a plan in place will help to keep you on track.

I'm sure this goes without saying, but, a staple in my house is also my Shakeology.   Shakeology provides me with my daily dose of nutrients. It's filled with superfoods, probiotics, and just TONS of vitamins and minerals that you would most likely not otherwise get. I love the natural energy that I get from Shakeology and it also has greatly helped in curbing my cravings.  It's great to have a guilt-free meal that tastes like a treat!

On to my workouts!  So, I decided a couple of weeks ago to begin incorporating PiYo back in to my schedule!  I can't pass up on my regular 21 Day Fix Extreme workouts, so, I decided to do a hybrid of both!  I totally forgot how effective PiYo is!  It still amazes me at how sweaty and great I feel after doing a low impact, high intensity PiYo workout that does not involve jumping around! Below are a couple of different PiYo moves from the videos in case you are interested. It's actually on a deep discount price for about another week!  Plus, I have a new Fit for Summer group starting on June 22nd that you can join if you'd like!

Overall, I am feeling GREAT! I am loving the every other day change of pace with my workouts and also love that I can still incorporate my 21 Day Fix nutrition plans.

 I know it would be nice to have some sort of magic spell that would make you lose weight and get healthy but guess what....THERE ISN'T ONE! It takes commitment, dedication, and hard work! Baked Oatmeal Muffins

You MUST try this recipe!  Seriously, these muffins are sooo good! My girls loved them just as much as me! They also liked helping to make them! There are definitely some options that you could have in terms of toppings but in any case, this is a super easy recipe that would be really convenient to pop in the microwave in the morning for breakfast.  Give them a try and let me know what you think!



Ingredients:
Clean Eating, Meal Planning, 21 Day Fix, Baked Oatmeal, Baked Oatmeal Muffins, Healthy Breakfast, Successfully Fit, Lisa Decker
Baked Oatmeal Muffins
  •  1 egg
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 banana, mashed
  • 1/4 cup honey
  • 2 1/2 cups Old Fashioned Rolled Oats
  • 1 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk (I used unsweetened almond milk)
  • Optional: 1/8 cup of chia or flax seeds
  • Optional Toppings: raspberries, strawberries, blueberries, dark chocolate chips, nuts, chopped apple, banana, etc.

Baked Oatmeal Muffins
Directions:
  1.  Preheat oven to 350 degrees.
  2. Mix eggs, vanilla, milk, applesauce, banana, and honey together in a bowl.
  3. Add in the oats, chia/flax (if using), cinnamon, baking powder, and salt.  Mix well.
  4. Grease a muffin pan or fill a muffin pan with baking cups.
  5. Divide mixture evenly into 12 muffin cups.
  6. Add the toppings of your choice.
  7. Bake for 30 minutes.
They are DELICIOUS when right out of the oven!  You could even store them in the freezer if you are making a larger batch.
