Chicken Piccata

I tried a new recipe last night and since it officially got the husband approval, I decided to add it to my blog! I actually found this recipe from the Team Beachbody Blog and new I had to try it.  After some research on the TONS of ways to make Chicken Piccata, I decided at first to mix a couple of recipes together.  BUT, once I got going I decided to just stick with one.  Give it a try and let me know what you think!

Ingredients: (Yields 4 servings)
4 (4-oz.) each raw chicken breasts, boneless, skinless
1 Tbsp. whole wheat flour
2 Tbsp. olive oil
1 clove garlic, finely chopped
2 Tbsp. fresh lemon juice
½ cup low-sodium, organic vegetable broth
6 Tbsp. capers
1 (14-oz.) can quartered artichoke hearts, packed in water, drained
2 cups sliced mushrooms
 
 
 Preparation:
1. Place chicken in a resealable plastic bag. Add flour and seal. Shake to coat chicken.
2. Heat oil in a large skillet over medium-high heat.
3. Add chicken, cook for 3 minutes on each side, or until browned.
4. Add garlic; cook for 1 to 2 minutes or until tender.
5. Add lemon juice, broth, capers, artichoke hearts, and mushrooms; cook, turning chicken halfway through, for 12 to 15 minutes, or until chicken is no longer pink in the middle.


Those who follow the color coded potion plan such as the 21 Day Fix, this recipe would be 1 red, 1 green, and 1/2 blue/orange.  This is for the JUST the recipe, not any side dishes you decide to add to it.

Happy Tuesday!!  It's been a while since I've given an update on my 22 Minute Hard Corps journey.  I'm still at it and actually, I just started Week 7 yesterday!!  Due to some sicknesses I had to have a redo of Week 6.  Believe it or not, I am still LOVING the program!!  It kinda has the best of both worlds.  It's got a GREAT nutrition plan using the color coded portion control containers, and then it has these awesome short, yet effective, workouts that will leave you feeling good, healthy, and energized to take on the day!  Seriously, this program is PERFECT for moms and for those who have a super busy schedule.

So, let me give you a nutrition update. Truth be told,  I was struggling a bit.  I've been working late hours (aka not getting enough sleep), munching a bit more in the evenings, and skipping some snacks here and there.  Can you relate?  Sometimes we get so busy with our day that we forget to eat, right?  Then, when you DO eat you feel like you could eat your entire house LOL.  So, with the combination of all of those factors, my energy was lacking a bit and I even gained a couple of pounds.  SO, I had to recommit myself to getting on track and focusing on my health.  You know what?  It happens. We go in and out of those cycles.  We really can't be perfect 100% of the time.  Something that I tell my challengers is that what matters is that we recognize our faults/struggles, we pick ourselves back up, and we get ourselves back on track.  So, with Week 7 of Hard Corps, I have my meal plan in place, I have food prepped in my fridge, and I am CRUSHING it!  I honestly think that a lot has to do with my accountability groups. No, I'm not tooting my own horn LOL.  What I am saying is that when I check in with my groups and see their dedication, sweaty selfies, and read about how they passed up a treat at work, it gives ME motivation too!! 

I shared this quote the other day and got a GREAT response from it.  It may be a bit harsh, but it is the truth. If you haven't reached whatever goal(s) YOU have, what's holding you back?  Is it an excuse?

 I am also focusing more on my nutrition and MAKING THE TIME to prep my foods.  Check out some of the meals I've been eating below!  Healthy eating doesn't have to be boring!  In fact, it's far from that! It's rejuvenating, fulfilling, and it leaves you feeling much more energized!   

Some of my favorite meals I'm been having include Shakeology, salads with veggies, strawberries with balsamic, chicken stir fry, and veggie omelets with whole grain/sprouted toast!  Having healthy foods in your fridge and pantry will limit you to ONLY EATING HEALTHY FOODS!!

Here is a glimpse at a couple of meal plans I've been following as well!  Life always throws obstacles at us so yes, there are times when I  have to switch a meal or snack here and there. There are times when we decide last minute to go out to eat, and there are times when I just don't feel like eating what I have planned.  BUT, I HAVE A PLAN and if I find myself hitting those obstacles, I mind my portions and do the best that I can!  Simple as that!

Actually, they are GREAT!  Like I said above, these workouts are perfect for those with busy schedules and especially for those who workout with young kids at home.  SHORT and EFFECTIVE.  That's EXACTLY what I am looking for in a workout.  I don't feel like I am dying at the end but I do feel like I get a GREAT sweat and calorie burn in!  I love that this program combines traditional cardio with resistance training, which again, is the best of both worlds.  And in case you are wondering, there IS a modifier in this program so don't think it is too hard for you!

Throughout the past few weeks I've added in the additional Core workout.  There are two Core workouts in this program.  Core 1 is roughly 8-9 minutes long and Core 2 is about 11-12 minutes long.   You have the option to do them on Cardio days.  I try to throw them in every day.  Sometimes I do them with my regular workout and other times I just do them when I have 10 minutes to spare. I love doing workouts that target my core because I'm still looking for those abs to appear.  With this program, I think that just may happen!  My abs are BURNING after I do them, which is a good thing!  Below is a sneak peek of Core 2.

22 Minute Hard Corps has literally taken your "I'm busy" excuse and tossed it out the window.   Seriously, 22 MINUTE EFFECTIVE WORKOUTS!!!  You really can't beat that!! That's less than a TV show!  That's less than the time people spend scrolling Facebook!  That's less than it probably even takes you to get ready in the morning!  I used to use that time excuse in the past. I blamed everything including my kids for not having the time to work out.  I don't do that anymore.  I stopped doing that a while ago but I occasionally pulled that excuse out of my back pocket.  I can proudly say that I haven't said that or used that excuse AT ALL on this journey. Sure, I may re arrange my rest days based on my schedule, but I am sticking to the program!!!

Building a Successful Business on Part Time Hours



In June of 2013 I decided that I needed to make an all around life change.  At the time, I had two babies, was working as a sixth grade teacher, and just an overall busy mom!  I NEVER put myself first and that includes my health.  Dinners were all about finding whatever was the quickest to throw in the oven or the microwave.  On top of that, I was at a tough spot in my career.   My heart will always belong to teaching; however, child care issues came about for my own daughters and we simply couldn't find somewhere (without a waiting list) to get them in to for the following Fall when I would be returning back to work. 

With all of that being said, I decided to push the stress off with getting myself back on tack to living a healthy life.  I was constantly drained and exhausted and while I THOUGHT I was eating somewhat healthy, I really wasn't at all.  So I decided to join a Beachbody Challenge group, give Shakeology a try, and make it a priority to implement daily exercise in to my already busy schedule.  I chose TurboFire because it seemed fun and upbeat (and I was right)!  I spent my Summer trying new recipes and making my own health transformation. I gained my energy back, started making much healthier meals, got over the fact that I don't really like to cook, and just DID IT!  I absolutely fell in love with the challenge group I was in.  I had daily check ins, I learned A TON about eating healthy, and I was provided with that daily motivation from both my Coach and the other women in the group. It was an overall success!! 
 
By August, my husband and I decided that it would be best if I take a one year leave of absence from my teaching position.  In doing that, I would be able to stay home with our daughter's and put the child care issue on the back burner.  I am very grateful that I was in a position to be able to do that and never took that for granted.  Around the same time, I started looking in to becoming an actively working Beachbody Coach.  I was actually already a Coach so that I could get my products for cheaper but I felt a strong connection between Coaching and my passion for teaching.  I knew that while I would love being home with my girls, I was truly going to miss being in the classroom.  So, I got hooked up in to a Coach training, learned the business and then got to work! 

There was one problem though.....despite what some people think, stay at home moms don't exactly have all day to do whatever they want!  In fact, they have very little time!!  I almost felt just as busy being at home!  I was determined to prove to myself that I COULD have the best of both worlds.  To me, the best of both worlds included staying home with my girls while also working from home earning a stable income.  

Fast forward to today, April 2016.  I have been paying it forward by running multiple accountability groups each month to help OTHERS figure out how to get themselves healthy, happy, and feeling confident. In addition, for the past several months I run multiple coach training groups to help my Coaches AND their Coaches build a business of their own!   I am 100% happy with my job and truly couldn't ask for anything more.  The best part is, I have been able to figure out how to build my business while working around being a stay at home mom.  While there are some things that I am able to do a bit more freely throughout the day than some others who aren't at home, for the most part, my days are spent as a mom.  A couple mornings a week my youngest daughter goes to preschool for a few hours and other than that, I put my time in in the evenings (mainly Sunday through Thursday) after my girls are in bed.  I have designed WHEN I want to work and how much effort I want to put in as well! As a result, yes, I have been able to more than replace my teaching income and I have several Coaches who are well on their way to do the same!

Coaching has given my family FREEDOM and FLEXIBILITY.  My fear of becoming a one income family and struggling to provide our kids with what we want to give them never developed more than a thought.  We have been able to continue our family vacations and small weekend trips, we didn't struggle with the extra spending over the holidays, and most importantly, I am able to be home with my girls while taking part in changing others lives.  

Often times I hear "I don't have time to do what you do."  Trust me, I get that overwhelming feeling!  But the thing is, if you don't have a lot of time, THAT'S OK!!  You work with what you have and you learn the tips to being efficient in the process!  A book that I have all of my new Coaches read is The Compound Effect by Darren Hardy.  It's a great book for anyone to read, not just Coaches :)  It talks about how your simple actions day in and day out compound in to something greater.  


So, I am excited to announce that I am going to be offering a FREE 3 Day Sneak Peek in to what Beachbody Coaching is all about! It is going to run from Monday, April 25th - Wednesday, April 27th.  


Prior to getting involved with Beachbody I was a very very private person. I didn't know anything about social media, let alone network marketing, I felt like I didn't have any time in my day, I didn't want to bother my friends and family, I didn't want to be annoying, and I WAS AFRAID TO FAIL.  I really knew nothing about the business aside from a brief conversation I had with my Coach and I can honestly say I didn't know what I was doing AT ALL when I first started! I didn't even have a bigger picture!  I kind of just went with it but deep inside, this very detailed oriented girl ended up doing a ton of my own research to figure out the basics. 


Although my approach certainly wasn't a bad approach, to prevent others from spending so much time researching, I like to host these 3 Day Sneak Peek groups to explain how my team works, the training's available, and of course the logistics of the business.

My one request is this....don't over think it!  I had this whole "Coaching" thing in the back of my mind for MONTHS before I decided to commit.  I kept thinking that my plate was already full enough and that I didn't have the time.  I didn't have a free group to explain what Coaching was all about. I spent my own time researching and finding answers (which I never knew if they were accurate or not).  So, if you are intrigued in the least with this opportunity then I encourage you to have an open mind and see (in a free group) if it would be a good fit for you.

Overcoming Excuses


We all have them.  We can come up with them at the snap of our fingers.  What am I talking about?  EXCUSES not to exercise!  Look, I know life throws some curve balls at us but guess what?  That's never going to stop! We have to learn to deal with those obstacles and figure out how to work around them.    When it comes to exercising, putting it off or "doubling up tomorrow" is SO easy to say!  There are times when I am guilty of it too!  Often times it's just not on our priority list.  BUT, do you REALLY know how important it is to exercise?!!  Seriously, it may not feel like it at first, but a good workout can change around your whole day!

So, let's talk about those excuses and think about how you can overcome them.  I do want to say; however, that I understand when emergencies come up and that there are days where you physically  just can't swing it.  BUT, overall it's important for you to carve out some time each week (I personally recommend 5 - 6 days). Below are MY tips and suggestions that have worked for ME!  No, they may not work for everyone, but I hope you can find some tips that you are willing to try! 


EXCUSE #1: I don't have time!
Exercise Tips, Fitness Support, 21 Day Fix, Beachbody Coach, Exercise Excuses, Support, Accountability, Successfully Fit,  Lisa Decker TIP: This is probably one of the main excuses that I hear when chatting with my potential clients for my accountability groups.  We all have busy schedules and yes, sometimes things unexpectedly come up.  BUT, if you sit down over the weekend and plan out your week, you can figure out what times you DO have available! Use a little weekly calendar and plug in your work times, kids activities, errands, etc.  The great news is, you don't need an hour or more to get a good workout in!  In fact, you can get a great workout in as little as 22-30 minutes!  And on those extra busy days if you don't have time for that, you can do something as quick as 10 minutes of a HIIT workout or even an ab workout. ANYTHING is better than noting!   I personally work out at home right in my family room (and sometimes in the kitchen!).  The home workouts that I do are 30 minutes MAX. In fact, the program that I am doing now is only 22 minutes per day!  Believe me, the time issue was at the top of my list too, but once I figured out a schedule and grabbed some short, effective workouts, I MADE it work!  So, if you are interested in home fitness, what programs can you get that are short in length?  21 Day Fix, 21 Day Fix Extreme, PiYo, Focus T25, 22 Minute Hard Corps, Insanity Max 30...should I keep going?!!  There is seriously something for EVERYONE when it comes to Beachbody home fitness programs!  If you are a gym goer, that's fine too!  You have to find what works best for YOU!

TIP:  I GET IT!!  I've got 2 young daughters and my days are filled! I am exhausted by the end of the night!  The good news is, there are a few solutions to this problem! First, you can get your workout in in the morning BEFORE your work day begins.  Second, you can focus on fueling your body with proper nutrition. Often times the foods that we eat throughout the day simply make us tired and want to crash after about 30 minutes eating it.  Ditch the granola bars, fast food, high sugar/high carb meals and go with something that is much more nutritious!  Pair a complex carb with a protein!  Third, get an accountability partner!!  I know when I feel too tired to work out I check in with my accountability groups that I run and see how positive and inspiring everyone is.  It drives me to WANT to be able to say "I DID IT!"


EXCUSE #3: I can't because my kids are home with me.

This was actually my #1 excuse that I personally used once my daughters were born.  I mean honestly, how could you possibly give up 30 minutes of your time with babies and/or toddlers at home?  They can't sit still that long. They may destroy the house. They are "needy."  Yep, I used all of those phrases!  How did I overcome it?  Without sugar coating it, I sucked it up and did it!  At first I would get up super early and get my workout in BEFORE they woke up.  But, I learned that early morning workouts just weren't for me.  So, I started exercising in front of my kids. Yes, they were young. Yes, there were times during my 30 second breaks that I would change a quick diaper.  Yes, they would crawl on me and sometimes get in the way.  It didn't take very long though for them to catch on that this was becoming a daily habit of mine.  Soon enough, they started jumping around WITH me rather than ON me :)  Now that they are currently 4 and 6 years old, they ask ME when I am going to be exercising.  Sometimes they sit and have a snack, watch some TV, exercise with me, etc. It just depends on the day. It helps when I have some fun kid music, like the Chipmunks, playing during my workout.  On a side note, shorter workouts are WONDERFUL for those of you with young children!!

TIP:  I get this one too! To be honest, I never belonged to a gym in my life!  I really didn't have any particular reason aside from I just didn't feel like driving to a gym. And once I had my daughters I didn't feel like dragging them there either, let alone paying for the child care. Let me be clear though, I have NO problem with people who go to a gym. Some people feel they need that group workout or to be surrounded by other to really push themselves. That's fine!! Like I said, you have to do what works best for YOU!  BUT, if you are like me and a gym just doesn't do it for you, then stick with a home fitness program!  I've been working out at home for almost 3 years!  I LOVE it!  PLUS, it saves me A LOT of time.  I stick with my 22-30 minute workouts and that's it!  I even stream them right on my laptop!  I'm not driving somewhere, finding child care, and spending a couple of hours of my time by the time it's all said and done because THAT is something that I really don't have time in my day for.  It's also nice in the Winter time to stay in my cozy house rather than going out in the cold. 

EXCUSE #5: I don't know what exercises to do or where to start!

TIP: No problem! I can help!  Finding support to help you start {and stay} healthy is a HUGE component of success, in my opinion.  I remember the days where I would exercise almost every night yet see ZERO results.  It wasn't until I joined an online accountability group with my personal Coach where I truly learned how to EAT healthy AND incorporate an exercise program to meet MY needs and goals.  That's what I do as a Coach!  I help others find a program to meet THEIR goals.  There are SO many options out there and having or needing guidance isn't anything to be ashamed of!  I love my accountability groups because the women in my groups keep ME motivated just as much as I keep THEM motivated!  The friendships formed are amazing and having a group of like minded positive people truly helps and holds each other accountable. 



Hopefully I have given you some ideas and tips that you can implement in your own life! Chicken Apple Stir Fry


I tried this recipe last night and LOVED it!  My family already loves basic chicken stir fry so switching it up a bit and adding some apples really hit the spot!  I searched and searched for a recipe for this; however, I didn't find one that I wanted to try so I honestly just tossed some things in the skillet, added some spices, and just went with it!  It turned out great!

Chicken Apple Stir Fry
The great thing about stir fry is you can put whatever you want in! So, feel free to experiment with some different veggies too!  Although I don't have an exact serving size, this recipe was enough to feed my family of 4.  To stick with my color coded container plan, I personally used 1 green of the veggies, 1 red of the chicken, 1 yellow of rice, and 1/2 purple of chopped apples.


Ingredients:
* 1 pound skinless, boneless chicken breast, chopped into small pieces
* 2 apples, peeled, cored and chopped (I used Fuji)
* 4 stalks celery
* 1 cup mushrooms
* 1 1/2 cups carrots
* 1 Tbsp extra virgin coconut oil
* 2 sweet peppers (I used red and yellow)
* 1 tsp ground cinnamon
* 1 tsp ground giner
* 1 Tbsp low sodium soy sauce

Directions:
1.  Wash and pre-cut all veggies and apples.
2. Pour coconut oil in medium skillet over medium heat.
3. Add veggies and apples and cook for about 3-4 minutes before adding the chicken, soy sauce, ginger, and cinnamon.
4. Cook for about 10-15 minutes or until chicken is no longer pink and veggies are a bit softened.  I covered my skillet but it isn't necessary.  Stir frequently.
** Something I thought of after the fact was to add 1/4 cup of slivered almonds to toast and toss on top of the stir fry. ** 

I served the stir fry over brown rice and it was delicious!! It makes for great leftovers too!

Happy April!!  I can’t believe that Spring is officially here and Summer is right around the corner!  Here in Central PA the weather temps have been up and down, causing us to have a few sandals and short sleeved shirts out.  When I think back to a few years ago, I actually dreaded this time of year. It wasn’t’ the weather that I wasn’t looking forward to.  It was the change in wardrobes.  I was always nervous to try on those crop pants and shorts and was hesitant on ditching the bulky sweaters.  Why?  Well, like many people, it was pretty much habit for me to put on a few extra pounds through Winter.  I mean, why not?  The heavy and baggy Winter clothes hid some extra pounds pretty well.

So as the cycle would continue, I would “diet” for a few weeks, drop those extra pounds, and viola!  The clothes would fit again.  That’s great right?  Actually, not really.  I used to have this perception that if you just eat less and stick to fruits and veggies you would magically become thinner and healthy.  What I apparently WASN’T comprehending was that the energy was going right down with the pounds.  And should I mention that when you lose weight, if you aren’t actually exercising then you aren’t building any muscle and getting any stronger either.  I love that phrase “strong is the new skinny.”  That is the exact concept that I want both of my girls to engrave in their minds, which is why I almost always exercise in front of them and of course eat healthy.

Those little eyes are always looking up to us.   It’s like that monkey see monkey do concept.  At 4 years old my youngest daughter is able to identify whether something is healthy or not.  Of course, like most kids, she loves her junk. But she knows the rule…she’s gotta eat healthy foods first! 



So what made me break that typical and viscous cycle that kept happening?  LEARNING how to truly eat healthy AND incorporating daily exercise (or at least 5 to 6 days per week).  Am I a size 0?  NO!  Am I “skinny?”  NO!  I’m healthy, I’m strong, and I’m in the best shape of my life!  How did I do it?  A little something called a Beachbody Challenge Group.  



What’s that?

It’s on online accountability group that taught me how to eat healthy, how to meal plan, kept me motivated daily, and held me accountable 24/7.  I made an investment into my health by committing to a fitness program that met my needs and replaced one meal per day with Shakeology.  Let me tell you, Shakeology was NOT something that I necessarily wanted to do. I knew I was going to be losing my income due to making the decision to take a year off from my job so I was a bit concerned that I wasn’t going to have the money to keep up with it.  That was FAR from the truth!  I feel in love with Shakeology (despite me saying “I don’t do shakes”) and it didn’t actually end up being much of an added expense.  I was able to cut a TON of processed foods out of my kitchen and I was/am getting my daily dose of nutrients because of it.

So, 3 years later I have been paying it forward by running my own online accountability groups to help others live a healthier lifestyle.

How does it work? 



I have a closed Facebook group set up so only the members of the group can see what is being posted.  On April 11th we will begin with a planning week where I have everyone create their goals, take measurements and before pics (no, you don’t share these with the group), and then we dive in to the meal planning process.  By Monday, April 18th everyone will have a plan in place and workouts ready to go! I will provide daily support, motivation, and accountability throughout the group and am also available to help with 1:1 support.



What are the requirement’s?



Before the group begins I will get you hooked up with a fitness program to meet your needs.  There are programs that range from 22 minutes per day up to about 40 minutes.  There are workouts that are cardio based, cardio / resistance, some that includes weights, sandbags, you name it!  There is something for everyone!  In addition, we will all incorporate Shakeology for one meal per day for the duration of the group.  Don’t worry, you will still be eating plenty of “real food.” LOL  I hear a lot of people (including myself at first) say that they don’t’ want to drink a meal and they want to eat real food.  But guess what?  Shakeology is “real food” and come on, who wouldn’t want to drink a milkshake for a quick healthy breakfast, lunch, or even a snack!  When the group is over you can make the decision to continue with Shakeology or call it quits.  There are no strings attached!  These products are purchased through something called a “Challenge Pack.” It’s a discounted pack that includes your program of choice and Shakeology.
