Lemony Angel Hair Pasta with a Twist


I've got a GREAT recipe to share with you!  No, I didn't create it on my own. In fact, I got it from the June edition of the Clean Eating Magazine!  It was delicious and even the hubby approved!  Give it a try and let me know what you think!

Lemon Angle Hair Pasta


Ingredients (serves 4)
  •  4 oz whole grain angel hair pasta
  • 12 oz boneless, skinless chicken breast cut into strips
  • 3 Tbsp lemon juice
  • 1 bunch of asparagus (trimmed)
  • 1/2 cup chopped fresh mint
  • 2 tsp olive oil
  • 1/2 cup low-sodium chicken broth
  • 2 Tbsp cold organic unsalted butter

Directions: 
1. Cook pasta according to box.  Reserve 1/2 cup of the cooking liquid before draining.
2. While pasta is cooking season chicken with salt and pepper (if desired).  In a large skillet heat oil on medium heat. Add chicken, and cook for about 4-6 minutes.
3. Once pasta is drained, stir pasta, broth, lemon juice, and butter in skillet.  Bring to a simmer.
4. Add asparagus and cook, stirring, until asparagus is tender-crisp and chicken is no longer pink inside. 
5. Stir in 1/4 cup mint and enough of the reserved cooking liquid to make a thin sauce. 
6. Sprinkle in remaining 1/4 cup mint. 
7. Serve immediately.

Fit for Summer Challenge

Good Friday Morning! We are one full week in to May and I don't know about you, but I am EXCITED for Summer!!  This up and down weather is driving me crazy and I just want warm sunny days!!  My family scheduled our annual June beach vacation so I have been on the hunt for a new swimsuit.  Naturally, I like to get a new one every year!  I was at Macy's the other day and tried some on.  Yikes!!  Between the lighting and my pale skin, I was NOT very happy!  Sure, I am in pretty good shape but like many others, there are some areas that I wanted to really focus on toning up.  

There are so many "diets" and pills out there that claim to be the miracle weight loss answer but let's face it, eating healthy and exercising is what we really need to be focusing on.  Sure, there are some things out there that will help you lose weight very quickly, but chances are by the end of the month you'll gain that weight back, not to mention that weight loss without exercising certainly isn't going to tone those muscles!  

I learned all of this the hard way.  I would exercise my heart out but my nutrition was yet to be desired, hence me not getting results.  When I DID focus on my nutrition I would lose a few pounds but I felt just as flabby.  

This is when online accountability entered in to my life.  Yes, when it comes down to it YOU have to put the work in, but why not have support and motivation from like minded people while doing it?!  This is what the real game changer was for me.  I joined a group, met some other women who had the same goal of "making a healthy lifestyle change," and I held myself accountable with daily check ins.  By the end of the group I was seeing GREAT results and had a MUCH better understanding of what it takes to truly get healthy (the right way!).  


So, to get in to that Summer mood, I am kicking off my Fit for Summer Challenge which begins planning week on Monday, May 16th!!

WHAT is involved & WHO can participate? 
This group will be lead through a closed Facebook group so only the members of the group can see what is being posted.  In addition, I lead these groups for support for my customers and Coaches, so, if you are already actively working with a Beachbody Coach unfortunately, you can not participate.

I will help to match you up with a Beachbody fitness program that meets YOUR goals and we will also be replacing one meal per day with Shakeology, which is a nutritional shake that will ensure you are getting your daily dose of nutrients. It also has great benefits like giving you a boost of natural energy and curbing your cravings!  When the group is over we can discuss whether or not you want to continue on. This combination is called a Challenge Pack. There are several options and I am confident that I can match the perfect one up for you!    

Because we are celebrating Mother's Day this weekend, I am also running a special promotion from today through Sunday at Midnight!  All of you Mom's out there, I want to especially help YOU!!  It's tough to put ourselves first because we are always so focused on our children but guess what, we need to!! There is not better feeling than knowing that you are being a positive role model in showing your children how to live a healthy life.

Garlic & Lemon Chicken Pasta


I tried another new dinner last night and as expected, it was a hit!  This has most definitely made it on the dinner rotation!!  I do watch how much pasta I eat so this is probably an every other week kind of meal.  For my personal serving, I loaded on the chicken, tomatoes, and spinach.    Give it a try and let me know what you think!

Garlic and Lemon Chicken Pasta

Ingredients:
Garlic and Lemon Chicken Pasta, Clean Eating, Healthy Dinners, Healthy Pasta Recipes, Meal Planning, 21 Day Fix Dinners
Garlic and Lemon Chicken Pasta
  •  1 pound boneless, skinless chicken breasts cut in to 1 inch cubes
  •  1 pound whole gain linguine 
  • 1 1/2 ups spinach (chopped)
  • 1 1/2 cups of grape tomatoes (quartered)
  • 1 cove garlic (minced)
  • 2 1/2 Tbsp extra virgin olive oil
  • 1 lemon (juiced)
  • salt/pepper to taste 
  • Parmesan cheese (optional)

Directions:
  1. Bring pot of water to boil and cook pasta according to the package. 
  2. While the pasta is cooking, heat 1 Tbsp olive oil in a medium skillet on medium heat. 
  3. Add chicken and cook until no longer pink.
  4. Add the tomatoes and spinach, stirring occasionally, on low heat.
  5. In a small bowl, whisk 1 1/2 Tbsp olive oil, the juice of 1 lemon, garlic, salt, and pepper.  Set aside. 
  6. Drain pasta and combine with chicken/tomato/spinach mixture.  Top it with the lemon garlic sauce. Mix well.
  7. Serve and Enjoy!  
Serving Size:  I personally try to keep my pasta servings to 3/4-1 cup but like I mentioned above, I like to load my portion with the protein and veggies.
