Ok I have to admit, I haven't experimented as much as I'd like with my Instant Pot and I've also had a couple of disasters. There is no doubt it takes some getting used to! The other week I kind of blew up a whole chicken! BUT, I came across a few different beef stew recipes, chose some ingredients from here and there, and put a recipe together for me to try. I was a bit nervous on how it would turn out and I have to admit, it was delicious and definitely a keeper for our dinner rotation! You can always cook beef stew in the crock pot (which I do have a recipe for under the Clean Eating Recipes tab) but this specific recipe is for those who have an Instant Pot! Oh, and it makes for GREAT leftovers too which is a bonus!

Ingredients:

Instant Pot Beef Stew |
- 1 Tbsp extra virgin olive oil
- 2 pounds beef stew meat
- 3 cloves garlic, minced
- 2/3 cup onion, chopped
- 2-3 medium russet potatoes, cubed
- 4 large carrots, peeled & sliced into 1 inch chunks
- 1 cup beef broth
- 1/4 cup tomato paste
- 1 tsp oregano
- 1 steamer bag of green beans
Directions:
- Turn the Instant Pot to the saute setting and add olive oil, garlic and meat. Brown for about 3-5 minutes.
- Add the onion, potatoes, carrots, broth, tomato paste and oregano and stir to combine.
- Put lid on, lock in to place, and use the meat/stew button to cook. It will take approximately 35 minutes to cook. You can let the pressure release naturally or use the quick release.
- Stir in the COOKED green beans just before serving.
- Serve warm
