Instant Pot Beef Stew

Ok I have to admit, I haven't experimented as much as I'd like with my Instant Pot and I've also had a couple of disasters.  There is no doubt it takes some getting used to!  The other week I kind of blew up a whole chicken! BUT, I came across a few different beef stew recipes, chose some ingredients from here and there, and put a recipe together for me to try.  I was a bit nervous on how it would turn out and I have to admit, it was delicious and definitely a keeper for our dinner rotation! You can always cook beef stew in the crock pot (which I do have a recipe for under the Clean Eating Recipes tab) but this specific recipe is for those who have an Instant Pot!  Oh, and it makes for GREAT leftovers too which is a bonus!

Ingredients:

Instant Pot Beef Stew
 Directions: 
  1. Turn the Instant Pot to the saute setting and add olive oil, garlic and meat.  Brown for about 3-5 minutes. 
  2. Add the onion, potatoes, carrots, broth, tomato paste and oregano and stir to combine.
  3. Put lid on, lock in to place, and use the meat/stew button to cook. It will take approximately 35 minutes to cook.  You can let the pressure release naturally or use the quick release. 
  4. Stir in the COOKED green beans just before serving.
  5. Serve warm
